Tips for success
For the most decadent result, serve the cake warm, straight from the pan. The fudge sauce is at its most luscious when slightly warm, and the pistachios retain their crunch.
If you prefer a firmer texture, let the cake cool completely; it will set into a dense, fudgy slice that's almost like a brownie. You can also refrigerate it for an hour to make slicing easier, but bring it back to room temperature before serving to soften the crumb.
To get clean, neat slices, use a serrated knife and wipe it with a damp cloth between cuts. For an extra touch, drizzle a little warm fudge sauce over each slice before serving, and add a dollop of whipped cream or a scoop of vanilla ice cream.
The cold creaminess contrasts beautifully with the warm, rich cake. If you have leftover pistachios, sprinkle a few extra on top just before serving for added texture.
Variations
- Mocha Islak Kek: Add 1-2 teaspoons of instant espresso powder to the batter and the sauce for a coffee-chocolate twist. The espresso enhances the cocoa flavor without adding bitterness.
- Orange-Chocolate: Add the zest of one orange to the batter and a splash of orange liqueur to the sauce. The citrus brightens the rich chocolate and pairs well with pistachios.
- Nut-Free Version: Omit the pistachios and top with shredded coconut or a sprinkle of sea salt. This version is perfect for those with nut allergies.
- Spiced Chocolate: Add 1/2 teaspoon of ground cinnamon and a pinch of cayenne to the dry ingredients. The warm spices add depth and a subtle heat that complements the fudge sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 3 days. The cake remains moist; let it come to room temperature or warm before serving.
- Freezer
- Freeze the unsoaked cake for up to 2 months. Thaw, then pour the sauce over and proceed with the recipe.
- Reheat
- Reheat individual slices in the microwave for 15-20 seconds, or warm the whole cake in a 300°F oven for 10 minutes.
Store leftover Islak Kek in an airtight container in the refrigerator for up to 3 days. The cake stays moist thanks to the absorbed sauce. Before serving, let it sit at room temperature for 20-30 minutes to soften. You can also warm individual slices in the microwave for 15-20 seconds for that fresh-from-the-oven feel.
This cake is actually better the next day, as the sauce has more time to penetrate the crumb. You can make it a day ahead, cover it, and refrigerate. Bring it to room temperature before serving, or warm it gently in the oven at 300°F (150°C) for 10 minutes. The pistachios may soften slightly, so you can add a fresh sprinkle before serving.
Serving ideas
Serve Islak Kek as a dessert at parties, potlucks, or family dinners. It's a crowd-pleaser that's both familiar and exotic.
Cut it into squares and serve on a platter, or plate individual slices with a spoonful of the extra sauce from the pan. For a more elegant presentation, add a quenelle of vanilla ice cream or a dusting of powdered sugar.
This cake pairs wonderfully with coffee or tea, as the bitterness of the cocoa complements the rich flavors. For a special occasion, serve it with a drizzle of warm caramel or a scoop of espresso ice cream.
The pistachios add a festive touch, making it suitable for holidays like Eid or Christmas. It's also a great make-ahead dessert for entertaining, as it only gets better with time.

Islak Kek: Ultra-Moist Chocolate Fudge Cake

Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 1 cup whole milk
- 1 cup vegetable oil
- 3 tbsp dark cocoa powder
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 tbsp dark cocoa powder
- 3 tbsp unsalted butter
- 1/2 cup crushed pistachios
Instructions
- In a large mixing bowl, beat the eggs and 1 cup sugar with an electric mixer on medium-high speed until pale, thick, and tripled in volume, about 3-4 minutes. The mixture should fall in a thick ribbon when the beaters are lifted. This aerates the batter for a tender crumb.
- With the mixer on low, pour in 1 cup milk and 1 cup vegetable oil. Mix until just combined. The batter may look slightly separated at first; that's fine. Scrape down the sides to ensure even mixing.
- Add 3 tbsp dark cocoa powder, 2 cups flour, and 2 tsp baking powder to the wet mixture. Mix on low until just combined, then switch to a spatula and fold gently until no dry streaks remain. The batter will be thin and silky.
- Pour the batter into a greased 9x13-inch baking pan. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. The cake should be set and slightly pulling away from the edges.
- In a medium saucepan, combine 2 cups milk, 1/2 cup sugar, 3 tbsp dark cocoa powder, and 3 tbsp butter. Bring to a simmer over medium heat, whisking constantly. Cook for 5-7 minutes until the sauce thickens slightly and coats the back of a spoon.
- While the cake is still warm, poke holes all over the surface with a fork or skewer. Pour the hot fudge sauce evenly over the entire cake, letting it seep into every pore. The cake will absorb the sauce and become deeply moist.
- Allow the cake to rest for at least 10 minutes so the sauce fully absorbs into the sponge. The cake will look dark, glossy, and almost wet. This resting period is key to the signature Islak Kek texture.
- Generously shower the top of the cake with 1/2 cup crushed pistachios, pressing them lightly so they stick. The bright green against the dark fudge makes a beautiful contrast and adds a nutty crunch.
- Using a spatula, lift an oozing slice from the pan and transfer to a plate. Serve warm or at room temperature. The cake is incredibly moist and can be enjoyed as is, or with a scoop of vanilla ice cream if desired.
