Tips for success
For the best texture, use very ripe bananas with brown spots. They are sweeter and more aromatic, which enhances the banana flavor.
If your bananas are not ripe enough, you can place them in a warm oven for a few minutes to speed up the process. The sour cream adds moisture and a slight tang, but you can substitute plain Greek yogurt if needed.
To ensure even baking, use a light-colored metal loaf pan rather than a dark one, which can cause the edges to overbrown. If the top of the bread browns too quickly, tent it loosely with aluminum foil.
Let the bread cool completely before slicing for cleaner cuts, but if you prefer a warm, gooey experience, slice it while slightly warm.
Variations
- Add nuts: Fold in 1/2 cup of chopped walnuts or pecans along with the chocolate chips for extra crunch and nutty flavor. Toast the nuts first for a deeper taste.
- Use dark chocolate: Replace semi-sweet chips with dark chocolate chunks (60-70% cacao) for a more intense, less sweet chocolate flavor. This pairs beautifully with the bananas.
- Add espresso powder: Stir 1 teaspoon of instant espresso powder into the dry ingredients to enhance the chocolate flavor without adding a coffee taste. This makes the bread even more decadent.
- Make muffins: Divide the batter among a 12-cup muffin tin lined with paper liners. Bake at 350°F (175°C) for 20-25 minutes, until a toothpick comes out with moist crumbs. Great for grab-and-go breakfasts.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature or warm slices in the microwave for a few seconds before serving.
- Freezer
- Wrap the cooled loaf tightly in plastic wrap and then in aluminum foil. Freeze for up to 3 months. Thaw overnight in the refrigerator before serving.
- Reheat
- To reheat, place slices on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes, or microwave for 15-20 seconds.
Store the banana bread in an airtight container at room temperature for up to 4 days. The bread will stay moist and fudgy. If the weather is humid, you can refrigerate it, but bring to room temperature before serving for the best flavor. For longer storage, wrap tightly and freeze.

Insanely Fudgy Double Chocolate Banana Bread

Ingredients
- 3 ripe bananas (about 360 g)
- 8 tbsp unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1/2 cup sour cream
- 1 tsp vanilla bean paste
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving overhang on two sides. In a large bowl, mash the ripe bananas with a fork until mostly smooth. Add the melted butter, granulated sugar, brown sugar, egg, sour cream, and vanilla bean paste. Whisk until the mixture is silky and well combined.
- In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Ensure there are no cocoa lumps. This dry mixture will be added to the wet ingredients in the next step.
- Add the dry ingredients to the wet mixture. Use a spatula or spoon to fold gently until just combined. Do not overmix; a few streaks of flour are okay. The batter will be thick and fudgy.
- Gently fold in 3/4 cup of the semi-sweet chocolate chips, reserving the remaining 1/4 cup for topping. Stir until the chips are evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and spread it evenly with a spatula. Sprinkle the remaining 1/4 cup chocolate chips over the top, pressing them gently into the surface.
- Bake in the preheated oven for 55 to 65 minutes, until a toothpick inserted into the center comes out with moist fudgy crumbs, not wet batter. The internal temperature of the bread should reach 200°F (93°C) for a fully baked center.
- Remove the loaf from the oven and let it cool in the pan on a wire rack for 10 minutes. This allows the structure to set before removing. After 10 minutes, lift the bread out using the parchment overhang and transfer to the rack to cool completely.
- Slice the bread with a serrated knife for clean cuts. Serve warm or at room temperature. The chocolate chips will be molten if served warm, and the crumb will be fudgy and moist.
