Before you start

Before starting, make sure the bananas are frozen solid—ideally overnight. Peel and slice them before freezing on a parchment-lined tray. Grate the matcha white chocolate just before serving so it stays fluffy.

Chop the pistachios into small, even pieces. Measure all ingredients and have the blender ready. If using a high-speed blender, you can add everything at once; otherwise, add the milk first to help the blades turn.

Ingredients at a glance (7)
  • 2 frozen bananas, sliced into coins
  • 1/4 cup shelled pistachios, chopped
  • 2 oz ceremonial matcha white chocolate, grated
  • 1 tbsp ceremonial matcha green tea powder
  • 2 tbsp roasted pistachio butter
  • 1 cup vanilla milk
  • 1 cup ice cubes

Instructions

Prep Phase

  1. Prep the Ingredients
Slice the frozen bananas into coins and set aside. Chop the pistachios into small, clean pieces. Grate the matcha white chocolate on a box grater into a bowl of emerald curls. Measure the matcha powder, pistachio butter, vanilla milk, and ice cubes.
Look for Bananas are in coins, pistachios are chopped, and chocolate is grated into fluffy curls.
Tip Use a light touch when grating the chocolate so it stays in curls rather than melting.

At the end of this phase, the bananas are in uniform coins, the pistachios are chopped into small pieces, and the matcha white chocolate is grated into fine, emerald curls. The ingredients are measured and ready. The chocolate should look like fresh sawdust, not clumped, and the pistachios should be dry, not oily.

Blend Phase

  1. Blend the Smoothie
Add the frozen banana coins, matcha powder, pistachio butter, vanilla milk, and ice cubes to a glass blender pitcher. Lock the lid and blend on high until the mixture becomes a thick, swirling vortex, about 45 to 60 seconds. Stop and scrape down the sides if needed.
Look for The smoothie is thick, creamy, and has a vibrant green color with a swirling motion.
Tip If the blender struggles, add a splash more vanilla milk, one tablespoon at a time.

The blender should create a visible vortex, pulling the ingredients down. The mixture will turn from separate pieces into a thick, smooth liquid. The color will become an even green. The texture should be like a thick milkshake, with no ice chunks visible. Stop blending when the vortex disappears and the top is smooth.

Top and Serve Phase

  1. Top and Serve
Pour the smoothie into two glasses. Top each with the grated matcha white chocolate shavings and a sprinkle of chopped pistachios. Serve immediately while cold and thick.
Look for The chocolate shavings sit on top, with pistachio pieces adding crunch.
Tip For a prettier swirl, drizzle a little pistachio butter around the inside of the glass before pouring.

The smoothie is poured into glasses, and the chocolate shavings and pistachios are sprinkled on top. The chocolate should remain in visible curls, and the pistachios should be evenly distributed.

The drink should be cold and thick, with the toppings creating a crunchy contrast. Serve immediately before the toppings sink.

Common mistakes

A common issue is adding too much liquid, which makes the smoothie thin and watery. Start with the smaller amount of milk and add more only if needed. Another mistake is using warm or overripe bananas—they will not create the same thick, creamy base.

Also, grating the chocolate too coarsely can result in large chunks that are hard to eat; use the fine side of the box grater. Finally, blending for too long can warm the drink, so stop as soon as it's smooth.

How to tell it’s done

The smoothie is done when it is thick and pourable, with a smooth, creamy texture and no visible chunks of banana or ice. The color should be an even, vibrant green. When you lift the blender lid, you should see a slow swirl.

The grated chocolate on top should remain distinct, not melted. If the smoothie is too thin, add a few more ice cubes and blend again; if too thick, add a splash of milk.
