Tips for success
For the crispiest chicken, use panko breadcrumbs, which are larger and airier than regular breadcrumbs. Mixing in grated parmesan adds flavor and helps the crust brown.
Do not skip the wire rack after frying — it keeps the bottom crust crisp instead of letting it steam on paper towels. If you want extra crunch, double-coat the chicken: dip in egg, then panko, then egg again, then panko again. This creates an even thicker, shatteringly crisp crust.
The hot honey glaze can be made ahead and reheated gently. If it crystallizes, add a spoonful of water and warm it over low heat. For a more intense garlic flavor, let the minced garlic sit in the honey for 10 minutes before heating. Adjust the heat level to your liking — use more chili flakes for a fiery kick, or omit them for a milder sandwich. You can also add a pinch of smoked paprika for a smoky note.
Variations
- Buffalo Chicken Caesar: Replace the hot honey glaze with a mixture of melted butter and hot sauce (1/4 cup hot sauce, 3 tbsp butter). Toss the fried chicken in the buffalo sauce, then assemble with the same Caesar romaine and blue cheese crumbles instead of shaved parmesan.
- Grilled Chicken Version: For a lighter take, grill or pan-sear the pounded chicken without breading. Season with salt, pepper, and garlic powder, then brush with the hot honey glaze during the last minute of cooking. The glaze will caramelize and cling to the chicken.
- Spicy Honey BBQ: Add 2 tbsp of your favorite BBQ sauce to the hot honey glaze along with a pinch of smoked paprika. This gives a smoky, tangy depth that pairs great with the Caesar slaw. Use a sturdy potato bun instead of brioche.
- Vegetarian Option: Use thick slices of halloumi or a firm tofu steak instead of chicken. Bread and fry the same way, then brush with the hot honey glaze. The salty, squeaky halloumi contrasts beautifully with the sweet-spicy glaze. Keep the rest of the assembly the same.
Storage and make-ahead
- Fridge
- Store leftover chicken and romaine separately in airtight containers for up to 2 days. Reheat the chicken in a 400°F oven or air fryer until hot and crispy.
- Freezer
- You can freeze the breaded, uncooked chicken cutlets for up to 3 months. Freeze them in a single layer on a baking sheet, then transfer to a freezer bag.
- Reheat
- Reheat leftover fried chicken in a 400°F (200°C) oven or air fryer for 5-7 minutes until hot and crispy. Do not microwave, as it will make the crust soggy.
Store leftover fried chicken and romaine separately in airtight containers in the refrigerator for up to 2 days. The chicken will lose its crispness when refrigerated, so reheat it in a 400°F (200°C) oven or air fryer for 5-7 minutes until hot and crispy.
The romaine is best eaten fresh; if you have leftover dressed lettuce, it will wilt, so plan to use it within a few hours. The hot honey glaze can be stored in a jar in the fridge for up to a week.
You can pound and bread the chicken cutlets up to a day ahead, then keep them covered in the refrigerator. Let them sit at room temperature for 15 minutes before frying (but no longer than 30 minutes total out of the fridge).
The hot honey glaze can be made and refrigerated for up to a week; reheat gently before brushing. The Caesar dressing can be made up to 3 days ahead — store it in a jar in the fridge. Toast the buns and assemble the sandwich just before serving.
Serving ideas
Serve the Hot Honey Crispy Chicken Caesar Sandwich immediately after assembling, while the chicken is still hot and crisp and the buns are warm.
The contrast of temperatures and textures is the whole point — you want that first bite to hit all at once: the crackle of the crust, the sticky-sweet heat of the honey, the cool crunch of romaine, and the buttery softness of the brioche. Have plenty of napkins on hand because it will get messy.
Pair it with a simple side of crispy fries, sweet potato wedges, or a light green salad. For drinks, a cold beer or a sparkling lemonade balances the heat. If you are serving a crowd, you can cut the sandwiches in half and secure with a toothpick for easy handling. Leftover hot honey glaze is great drizzled over fried chicken, pizza, or roasted vegetables.

Hot Honey Crispy Chicken Caesar Sandwich

Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- 1 tsp garlic powder
- 1/2 cup grated parmesan cheese
- 1/2 cup avocado oil, for frying
- 3 tbsp clover honey
- 1/2 tsp red chili flakes
- 1 tbsp hot sauce
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 4 brioche burger buns, split
- 2 tbsp garlic butter, softened
- 4 cups chopped romaine lettuce
- 1/2 cup Caesar dressing
- 1/2 cup shaved parmesan cheese
Instructions
- Place the chicken breasts on a cutting board and cover with plastic wrap. Pound to an even 1/2-inch thickness using a meat mallet or rolling pin. Season both sides with salt and black pepper. Set up a breading station: beaten eggs in one shallow dish; in a second dish, combine panko, garlic powder, and grated parmesan.
- Pour the avocado oil into a large skillet to a depth of about 1/4 inch. Heat over medium-high until a pinch of panko sizzles immediately when dropped in. The oil should shimmer but not smoke.
- Dip each pounded chicken breast into the beaten eggs, letting excess drip off, then press into the panko mixture until fully coated. Place in the hot oil and fry in batches, without crowding, for 3–4 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Transfer to a wire rack.
- In a small saucepan over medium heat, combine the honey, chili flakes, hot sauce, minced garlic, and butter. Cook, stirring, until the butter melts and the mixture bubbles gently. Simmer for 1–2 minutes until slightly thickened and fragrant.
- While the fried chicken is still hot, use a pastry brush to coat each cutlet generously with the hot honey glaze. Set aside on the wire rack so the glaze sets slightly.
- Spread the cut sides of the brioche buns with garlic butter. Heat a clean skillet or griddle over medium heat and toast the buns, cut side down, until golden and crisp, about 1–2 minutes. Remove and set aside.
- In a large bowl, combine the chopped romaine, Caesar dressing, and shaved parmesan. Toss well until every leaf is coated.
- Place the glazed chicken cutlets on the bottom buns. Pile the Caesar romaine on top, then close with the top buns. Press down gently to let the honey and dressing mingle. Serve immediately.
