Before you start

Before beginning, ensure the chicken is patted completely dry with paper towels to facilitate better searing. Prepare the garlic by mincing it finely and slice the lemons into thin, even rounds to ensure they cook at the same rate.

Have your oven-safe skillet ready on the stovetop and ensure the oven is fully preheated to 400°F (200°C) before starting the searing process to ensure a seamless transition between stovetop and oven.

Ingredients at a glance (5)
  • 4 lbs bone-in, skin-on chicken thighs
  • 1/2 cup honey
  • 4 cloves garlic, minced
  • 1 large lemon, sliced into rounds
  • 2 sprigs fresh rosemary

Instructions

Searing the skin

  1. Sear the chicken
Preheat the oven to 400°F (200°C). Place the chicken thighs skin-side down in a cold oven-safe skillet. Turn the heat to medium-high and sear until the skin is golden brown and crispy, about 8 to 10 minutes. Flip the chicken over once the skin releases easily from the pan.
Look for Skin should be deep golden brown and crispy.
Tip Do not rush the searing process; the crispy skin provides the essential texture for this dish.

The chicken skin should sound like it is sizzling sharply in the pan. At the end of this phase, the skin must be visibly golden and crispy, and it should release from the pan surface without sticking. If the skin is still pale or sticking, wait another minute before attempting to flip the thighs.

Glazing and roasting

  1. Prepare the glaze
While the chicken finishes searing, mix the honey and minced garlic in a small bowl. Pour the mixture over the chicken in the skillet, ensuring the thighs are well coated. Arrange the lemon slices and rosemary sprigs around the chicken in the pan.
Look for The sauce should start to bubble and thicken slightly.
Tip Ensure the honey is evenly distributed to prevent burning in one spot.

The kitchen should smell strongly of caramelized honey, roasted garlic, and bright lemon. The sauce in the pan should be bubbling vigorously and starting to coat the back of a spoon. Ensure the lemon slices are arranged in the spaces between the chicken pieces to allow them to roast and soften evenly.

Resting and serving

  1. Roast and finish
Transfer the skillet to the preheated oven. Bake for 20 to 25 minutes until the chicken is cooked through to an internal temperature of 165°F (74°C). Remove from the oven and let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
Look for The sauce should be syrupy, caramelized, and dark golden brown.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip The residual heat in the pan will help thicken the sauce further while resting.

After removing the skillet from the oven, the sauce should have thickened into a syrupy consistency. The chicken will continue to cook slightly during the resting period.

Check the internal temperature to ensure safety, and let the dish rest for at least 5 minutes so the glaze sets slightly and the juices redistribute.

Common mistakes

A common mistake is overcrowding the pan, which causes the chicken to steam rather than sear, resulting in soggy skin. Always cook in batches if necessary to maintain space between the thighs.

Another frequent error is adding the honey too early in the searing phase, which causes it to burn before the chicken is cooked through. Add the honey only once the skin is already crispy and the chicken is ready for the oven.

How to tell it’s done

The chicken is done when the internal temperature reaches 165°F (74°C) as measured by an instant-read thermometer inserted into the thickest part of the thigh, avoiding the bone.

The skin should be deep golden brown and crisp to the touch, and the sauce should appear thick, glossy, and slightly reduced, clinging to the chicken rather than running thin in the bottom of the pan.

  • Poultry: 165°F (74°C) in the thickest part

Coming up in Part 3: common questions

  • Can this be made with chicken breasts instead of thighs?
  • Why is the skin not getting crispy?
  • Can the honey be replaced with brown sugar?
