Tips for success
To enhance the overall flavor profile, consider adding a tiny pinch of orange zest or a splash of fresh orange juice to the honey-cranberry glaze while it simmers. The bright citrus notes complement both the tart cranberries and the sweet honey beautifully, adding an extra layer of complexity to the dish.
Additionally, ensure the chicken breasts are of relatively uniform thickness; if some are much thicker than others, gently pound them to an even thickness before searing.
For an extra touch of texture and flavor, toast the chopped walnuts in a dry skillet over medium heat for three to four minutes until they are fragrant before adding them to the dish. This simple step coaxes out the natural oils in the nuts, making them significantly crunchier and more flavorful. Be sure to watch them closely while toasting, as nuts can burn very quickly.
Variations
- Spicy Cranberry Chicken: Add a pinch of crushed red pepper flakes or cayenne pepper to the honey-cranberry glaze while simmering for a sweet and spicy kick.
- Maple Pecan Chicken: Substitute pure maple syrup for the honey and toasted pecans for the walnuts to create a rich, woodsy flavor profile.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the roasted vegetables and feta cheese will lose their desirable texture upon thawing.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) covered with foil for 15 minutes, or microwave individual portions on medium power.
Allow the dish to cool for no more than two hours at room temperature before transferring it to the refrigerator. Store any leftover honey cranberry chicken and roasted vegetables in an airtight container for up to three days.
Keep the leftover feta, walnuts, and rosemary stored separately if possible to preserve their fresh textures and prevent them from becoming soggy during storage.
The honey-cranberry sauce can easily be prepared up to three days in advance and stored in a sealed jar in the refrigerator. The sweet potatoes and Brussels sprouts can also be chopped and prepped the day before.
On the night of serving, simply sear the chicken, assemble the prepped components in the baking dish, and proceed with the baking instructions for a quick dinner.
Serving ideas
Serve this elegant honey cranberry chicken directly from the baking dish to showcase the stunning contrast of the ruby-red glaze, golden-brown roasted vegetables, white feta, and green rosemary.
This beautiful presentation makes it an excellent centerpiece for cozy family dinners or casual holiday gatherings, allowing guests to scoop up a perfect balance of chicken, vegetables, and toppings.
To complete the meal, pair this dish with a simple, crisp green salad tossed in a light vinaigrette to cut through the richness of the honey glaze and cheese. Warm, crusty rustic bread is also an excellent accompaniment, perfect for sweeping up any extra honey-cranberry glaze left on the plate. Serve alongside a chilled glass of dry white wine or sparkling cider.

Honey Cranberry Chicken with Roasted Autumn Vegetables

Ingredients
- 4 boneless skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 1 lb Brussels sprouts, trimmed and halved
- 1 1/2 cups fresh cranberries
- 1/2 cup honey
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 3 sprigs fresh rosemary
Instructions
- Preheat the oven to 400°F (204°C). Arrange the cubed sweet potatoes and halved Brussels sprouts in a single layer on a large rimmed baking sheet and roast for fifteen minutes.
- Place the chicken breasts in a hot skillet over medium-high heat. Sear the chicken for three to four minutes per side until a golden-brown crust forms on the outside.
- In a small saucepan, combine the fresh cranberries and honey. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Cook for five to seven minutes, stirring frequently, until the cranberries burst and form a thick, glossy, ruby-red glaze.
- Arrange the seared chicken breasts and the roasted sweet potatoes and Brussels sprouts in a baking dish. Spoon the warm honey-cranberry sauce generously over the top of each chicken breast, letting the glaze run down onto the surrounding vegetables.
- Bake at 400°F (204°C) for ten to twelve minutes, until the chicken reaches an internal temperature of 165°F (74°C). Remove from the oven and immediately top the dish with crumbled feta cheese, chopped walnuts, and fresh rosemary sprigs. Serve hot.
