Tips for success

For the best texture, cook the turkey on low rather than high. Low heat gives the collagen time to break down, making the meat more tender.

If you're short on time, you can cook on high for 2 to 3 hours, but check the temperature and adjust. The turkey should reach 165°F (74°C) before serving.

Don't skip the garlic butter on the pasta—it adds a layer of flavor that complements the creamy sauce.

If you want a lighter version, use whole-wheat penne and reduce the mozzarella slightly. The recipe is forgiving, so feel free to adjust the amount of mushrooms or cheese to your taste.

Variations

  • Chicken Version: Substitute boneless, skinless chicken breasts or thighs for the turkey. Cooking time may be slightly shorter; check for doneness at 3 hours on low. The rest of the recipe stays the same.
  • Add Vegetables: Stir in 1 cup of frozen peas or sliced carrots during the last 30 minutes of cooking. They add color and sweetness to the dish without changing the cooking time.
  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a dash of hot sauce to the sauce before cooking. The heat balances the creamy richness.
  • Herb Swap: Use garlic butter with rosemary or thyme instead of the classic herb blend. The earthy herbs complement the mushrooms and turkey beautifully.

Storage and make-ahead

Fridge
Refrigerate in an airtight container for up to 3 days. Reheat gently on the stovetop or microwave, adding a splash of milk if the sauce thickens.
Freezer
Freeze the turkey and sauce (without pasta) in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The turkey and sauce can be reheated gently in a saucepan over low heat, adding a splash of milk or broth to loosen the sauce if needed.

You can assemble the slow cooker the night before: layer the turkey, mushrooms, soup, cheese, and butter in the insert, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook on low as directed, adding about 30 minutes to the cooking time because the ingredients start cold.

Serving ideas

Serve the turkey and sauce over garlic butter penne for a complete meal. The creamy sauce also pairs well with mashed potatoes, rice, or crusty bread for dipping. A simple green salad with a lemon vinaigrette adds brightness to the rich dish.

For a more indulgent presentation, sprinkle extra mozzarella and fresh parsley over the top before serving.

The dish is hearty enough to stand alone, but it also works as a filling for baked potatoes or a topping for toasted bread. Leftovers make excellent sandwiches the next day.

Frequently asked questions

Can this recipe be made with frozen turkey breast?
Yes, but it's best to thaw the turkey in the refrigerator first for even cooking. If using frozen, add 1 to 2 hours to the cooking time and always check that the internal temperature reaches 165°F (74°C) before serving.
Why is the sauce thin after cooking?
The turkey releases moisture as it cooks, which can thin the sauce. To thicken it, remove the turkey and shred it, then stir the sauce and let it simmer uncovered for 10 to 15 minutes. You can also mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it in.
Can this be made in an Instant Pot or pressure cooker?
Yes, use the sauté function to brown the turkey first, then add the other ingredients and cook on high pressure for 15 minutes. Quick-release the pressure and shred the turkey. The sauce may be thinner; thicken as needed.
What can be used instead of cream of mushroom soup?
Cream of chicken soup works, or make a quick béchamel with butter, flour, milk, and sautéed mushrooms. The flavor will be slightly different but still delicious.
How can the dish be made gluten-free?
Use a gluten-free condensed cream of mushroom soup and gluten-free pasta. Check the labels on the butter and mozzarella to ensure they are gluten-free. The rest of the ingredients are naturally gluten-free.

Homestyle Mozzarella Mushroom Turkey Breast

Slow cooker full of creamy turkey and mushrooms with melted mozzarella

Ingredients

  • 2 lb boneless turkey breast cutlets
  • 8 oz sliced cremini mushrooms
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 1/2 cups shredded whole-milk mozzarella cheese
  • 2 tbsp garlic herb butter
  • 12 oz penne pasta
  • 2 tbsp garlic butter

Instructions

  1. Place the turkey breast cutlets in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced cremini mushrooms evenly over the turkey. Pour the condensed cream of mushroom soup over everything, spreading it with a spoon to cover the surface.
  2. Sprinkle the shredded mozzarella evenly over the soup layer. Place the garlic herb butter pats on top. Do not stir; leave the layers as they are to melt and blend during cooking.
  3. Cover the slow cooker and cook on low for 4 hours, or until the turkey is fork-tender and registers 165°F (74°C) in the thickest part. Do not lift the lid during the first 3 hours to keep the heat steady.
  4. Using two forks, shred the turkey directly in the slow cooker. Stir everything together so the sauce coats the shredded meat and mushrooms. Let it sit uncovered for 5 minutes to thicken slightly.
  5. Bring a large pot of salted water to a boil. Cook the penne according to package directions until al dente. Drain well, then return to the pot and toss with the garlic butter until the pasta is coated.
  6. Divide the garlic butter penne among plates. Spoon the creamy turkey and mushroom mixture generously over the top. Serve hot.
