Before you start
Before beginning, ensure that all ingredients are ready and at the appropriate temperature. If you are using a store-bought cake, have it ready at room temperature. If you are whipping your own cream, do so just before assembly to ensure maximum volume and stability.
Clear a space in your refrigerator large enough to hold the 9x13-inch dish flat, as this is where the dessert will spend its resting time. Having everything pre-measured and ready will make the assembly process efficient and clean.
Ingredients at a glance (5)
- 1 loaf angel food cake, store-bought or made ahead, cut into 1-inch cubes
- 1 can cherry pie filling (21 oz)
- 3 cups velvety whipped cream, freshly whipped or store-bought
- 1/2 cup sliced almonds, lightly toasted
- 1/4 cup maraschino cherries, halved
Instructions
Base assembly
- Prepare the baseCut the store-bought angel food cake into uniform 1-inch cubes. Arrange half of the cake cubes in an even layer across the bottom of a 9x13-inch glass casserole dish. Ensure the base is evenly covered to provide structure for the layers to follow.Look for The cake should cover the bottom of the dish completely without large gaps.Tip Use a serrated bread knife to cut the cake cubes cleanly without squashing the delicate crumb.
The first phase is complete when the bottom of the glass dish is covered in an even, single layer of cake cubes. Check that the cubes are uniform in size to ensure the subsequent layers of cherry filling and whipped cream distribute evenly across the surface. This creates the foundation for the entire dish.
Layering components
- Layer the fillingsSpread half of the cherry pie filling over the layer of cake cubes. Carefully top the cherries with half of the whipped cream, smoothing it out with a spatula to create a uniform layer. Repeat this process with the remaining cake, cherries, and finally the rest of the whipped cream.Look for The layers should look distinct and clean when viewed through the side of the glass dish.Tip Gently dollop the whipped cream and spread slowly to avoid mixing it into the cherry filling.
The second phase is finished once the final layer of whipped cream is spread smoothly over the top. The surface should be flat and clean, with no cherry filling bleeding through the cream.
The layers should be clearly visible through the glass sides of the dish, indicating that the filling is distributed correctly.
Garnishing and chilling
- Garnish and chillScatter the toasted sliced almonds and the halved maraschino cherries over the top layer of whipped cream. Place the assembled dish in the refrigerator for at least two hours before serving to allow the flavors to meld and the cake to absorb the moisture from the cream and cherries.Look for The cake will appear slightly firmer and the whipped cream will be set.Tip Toast the almond slices in a dry pan over medium heat for 2-3 minutes until fragrant and golden.
The final phase is complete once the almonds and cherries are scattered on top and the dish is placed in the refrigerator. The cake is ready to serve once it has chilled for at least two hours, appearing set and firm, with the aromas of almond and fruit beginning to develop.
Common mistakes
A common mistake is using cake that is too dense or dry, which will not absorb the moisture as effectively. Another error is failing to chill the dessert for the full duration; without sufficient time, the layers will slide apart when sliced.
Finally, do not over-mix or press down too hard on the whipped cream during assembly, as this can deflate the cream and lead to a heavy, dense dessert rather than the airy, light texture desired.
How to tell it’s done
The dessert is done when the layers have had at least two hours to chill. The whipped cream should look set and firm, and the cake cubes should feel slightly softened to the touch when a serving spoon is pressed against them.
Because this is a no-bake recipe, there are no internal temperatures to monitor; the indicator of success is the cohesive texture and the ability to lift a clean, defined square slice from the dish without the layers collapsing.
