Before you start

Before beginning, ensure all ingredients are measured and ready. Peel and thinly slice the potatoes, keeping them in a bowl of cold water if not using immediately to prevent oxidation.

Shred the cheddar cheese fresh from a block for the best melt quality. Preheat the oven to 375°F (190°C) and prepare a clean workspace for browning the meat.

Ingredients at a glance (6)
  • 1 lb ground beef
  • 3 cups sliced potatoes
  • 1 cup peas
  • 1 cup corn
  • 1 1/2 cups shredded cheddar cheese
  • 1 tbsp all-purpose seasoning

Instructions

Browning the Meat

  1. Prepare and Brown the Beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned and no longer pink. Season with the all-purpose seasoning. Ensure the beef reaches an internal temperature of 160°F (71°C) before proceeding.
Look for Beef is browned and fragrant
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Drain excess fat from the skillet to keep the casserole from becoming greasy.

The meat should be browned thoroughly with no pink remaining. The aroma should be savory and well-seasoned. Ensure all excess fat is drained from the skillet before transferring the beef to the baking dish to maintain the correct consistency of the final casserole layers.

Assembling the Layers

  1. Assemble the Casserole
Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread the cooked ground beef evenly across the bottom. Layer the sliced potatoes, peas, and corn over the beef. Cover the dish tightly with aluminum foil to ensure the potatoes steam and cook through thoroughly.
Look for Ingredients are layered evenly
Tip Cut potatoes into thin, uniform slices so they cook at the same rate as the vegetables.

The layers should be uniform and tightly packed. Ensure the potatoes are distributed evenly to avoid clusters of undercooked starch. The foil must create a tight seal around the edges of the baking dish to trap the steam necessary for softening the vegetables and potatoes correctly.

Melting and Finishing

  1. Bake and Serve
Bake in the preheated oven for 30 minutes. Remove the foil, sprinkle the shredded cheddar cheese over the top, and return to the oven for an additional 10 to 15 minutes, or until the cheese is melted, bubbly, and slightly browned. Remove from the oven and let rest for 10 minutes before serving.
Look for Cheese is melted and bubbly
Tip Resting the casserole allows the sauce to thicken and makes scooping much easier.

The cheese should be completely melted and showing signs of browning on the edges. The casserole should be bubbling vigorously around the sides of the dish.

After removing from the oven, the structure should firm up slightly during the resting period before being portioned and served.

Common mistakes

Avoid overcrowding the baking dish with too many layers, as this prevents even cooking and can lead to raw potatoes in the center. Do not skip the foil-covered baking phase, as this is essential for steaming the potatoes properly.

Finally, ensure the meat is fully browned and drained of excess fat before assembly to keep the final dish from becoming overly greasy.

How to tell it’s done

The casserole is done when the potatoes are fork-tender and the cheese topping is golden brown and bubbling across the entire surface.

Use a knife to test the center of the dish; if it slides through the potatoes with no resistance, the dish is ready. The ground beef must reach an internal temperature of 160°F (71°C) to be considered safely cooked.

  • Ground meat: 160°F (71°C) in the thickest part
