Tips for success
For the best flavor, use a full bottle of Guinness Draught, not a half-empty one. The stout should be at room temperature when added to the slow cooker.
If you prefer a thicker gravy, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into the pot after shredding, then cook on high for 15 minutes until thickened.
Do not rush the cooking. Bottom round roast requires at least 8 hours on low to become truly fork-tender. If your slow cooker runs hot, check at 7 hours.
The meat should be easy to shred but not mushy. For a more intense flavor, sear the roast in a hot skillet for 2 minutes per side before adding it to the slow cooker.
Variations
- Red Wine Version: Substitute the Guinness with 1 1/2 cups dry red wine and 1/2 cup beef broth. The wine adds a fruity depth that pairs well with the butter and herbs.
- Mushroom Addition: Add 8 oz sliced cremini mushrooms along with the pearl onions. The mushrooms release moisture and add an earthy flavor that complements the stout.
- Spicy Cowboy Butter: Mix 1 teaspoon smoked paprika and 1/2 teaspoon cayenne into the cowboy butter before placing it on the roast. This adds a gentle heat that cuts through the richness.
- Herb-Roasted Carrots: Add 2 large carrots, cut into 2-inch chunks, with the pearl onions. They become sweet and tender, absorbing the Guinness gravy.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze the shredded beef and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water if the gravy is too thick.
Store leftover beef, onions, and gravy in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld, making the leftovers even better. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much.
This recipe is ideal for making ahead. Cook the roast as directed, then cool the entire pot to room temperature within 2 hours and refrigerate.
The next day, skim any solidified fat, reheat gently, and serve. The beef can also be shredded and stored separately from the gravy for easy assembly.
Serving ideas
Serve the Guinness onion garlic butter roast over a bed of warm buttered egg noodles, with the gravy spooned generously over the top.
The noodles catch the rich sauce and provide a soft, comforting base. A sprinkle of fresh parsley adds color and a bright note, though it is optional.
For a lighter option, serve the beef on creamy mashed potatoes or with crusty bread to soak up the gravy. The dish also works well over rice or polenta. Pair it with a cold pint of stout or a simple green salad to balance the richness.

Guinness Onion Garlic Butter Bottom Round Roast

Ingredients
- 3 1/2 lb bottom round roast
- 1 lb pearl onions, peeled
- 1 bottle (14.9 oz) Guinness draught stout
- 4 oz cowboy garlic butter, cut into medallions
- 12 oz buttered egg noodles, for serving
Instructions
- Place the bottom round roast in the center of a 7-quart slow cooker. Scatter the peeled pearl onions around the roast, tucking some underneath for even cooking.
- Pour the Guinness draught stout over the roast and onions. The liquid should come about halfway up the roast; add a splash of water if needed.
- Place the cowboy garlic butter medallions evenly across the top of the roast. They will melt and baste the meat as it cooks.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the roast is fork-tender and easily shreds. Do not lift the lid during the first 6 hours. Let it rest for 3 minutes before slicing.
- After 8 hours, insert a fork into the thickest part of the roast. It should slide in with little resistance. If not, continue cooking and check every 30 minutes. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the liquid for at least 3 minutes before shredding. This allows the juices to redistribute.
- Using two forks, shred the roast directly in the slow cooker, mixing it with the onions and gravy. Remove any large pieces of fat if desired.
- Spoon the shredded beef, onions, and gravy over hot buttered egg noodles. Serve immediately.
