Tips for success
For the best flavor, choose a brisket that is well-marbled and has a good layer of fat. The fat renders during cooking, keeping the meat moist.
If you have time, sear the brisket in a hot skillet before adding it to the slow cooker—this adds a deeper color and flavor, but it's optional. The slow cooker method works beautifully without it.
Pearl onions are small and sweet, but you can substitute with a regular yellow onion cut into wedges. If using frozen pearl onions, there's no need to thaw them first—just add them straight to the pot. The onions will soften and absorb the stout flavor, becoming a delicious side element in the dish.
Variations
- Mushroom Stout Brisket: Add 8 ounces of sliced cremini mushrooms along with the pearl onions. The mushrooms will soak up the stout and butter, adding an earthy depth to the sauce. Use a robust stout like a coffee stout for extra richness.
- Onion Soup Mix Twist: Sprinkle a packet of dry onion soup mix over the brisket before adding the beer. This adds a savory, salty flavor and thickens the jus slightly. Reduce the butter to 1/4 cup to balance the salt.
- Honey-Glazed Brisket: Stir 2 tablespoons of honey into the Guinness before pouring over the meat. The honey adds a subtle sweetness that caramelizes during cooking, creating a beautiful glaze. Serve with a sprinkle of fresh thyme.
- Spicy Chipotle Brisket: Add 1 minced chipotle pepper in adobo sauce and 1 teaspoon of the adobo sauce to the pot along with the Guinness. The smoky heat pairs well with the rich beef and butter. Serve with a cooling crema or sour cream.
Storage and make-ahead
- Fridge
- Store leftover brisket in an airtight container in the refrigerator for up to 4 days. Keep the meat and jus together to prevent drying out.
- Freezer
- Freeze the brisket and jus in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a covered pot on the stovetop over low heat, adding a splash of beef broth or water if needed.
Leftover brisket can be stored in an airtight container in the refrigerator for up to 4 days. Keep the brisket and jus together to maintain moisture.
When reheating, use a gentle heat—either in the microwave or on the stovetop—adding a splash of beef broth or water if the sauce has thickened too much. The flavors actually deepen overnight, making leftovers even more delicious.
This recipe is ideal for making ahead. Cook the brisket as directed, then let it cool completely. Store the shredded beef and jus in the refrigerator for up to 4 days.
Reheat gently on the stovetop or in the microwave until warmed through. The brisket can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the brisket over a mound of whipped Yukon Gold mashed potatoes, spooning the buttery jus and onions over the top. The creamy potatoes balance the rich beef and beer sauce. A side of roasted carrots or green beans adds color and freshness. For a truly indulgent meal, offer crusty bread to soak up every last drop of the jus.
This dish also works well as a filling for sandwiches, piled onto soft rolls with a bit of the jus for dipping. For a lighter option, serve it over creamy polenta or egg noodles.
The brisket is hearty enough to stand alone, but the jus is so good you'll want something to soak it up. Leftovers can be reinvented as tacos, quesadillas, or a topping for baked potatoes.

Guinness Onion Butter Beef Brisket: Slow-Cooker Comfort

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 cup peeled white pearl onions
- 1 bottle (12 oz) Guinness draught stout
- 1/2 cup salted butter (1 stick)
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Scatter the pearl onions around the brisket, tucking them into the sides.
- Pour the Guinness stout over the brisket and onions, ensuring the liquid reaches about halfway up the meat. It will not cover the brisket completely.
- Place the stick of salted butter directly on top of the seasoned roast. Do not stir; the butter will melt and emulsify into the cooking liquid.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the brisket is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
- Using two forks, shred the brisket directly in the pot, mixing it with the onions and jus. Let it rest for at least 3 minutes before serving.
