Tips for success
For the most tender beef, always choose low heat and a longer cooking time. This allows the collagen to break down slowly, resulting in melt-in-your-mouth meat.
If you're short on time, high heat for 4 hours works, but the beef won't be quite as tender. Also, don't add extra liquid; the soup and cheese provide enough moisture.
Toasting the brioche slices brings out their buttery flavor and adds a nice crunch against the creamy sauce. You can also serve this dish over egg noodles, mashed potatoes, or rice.
For a touch of freshness, sprinkle with chopped parsley or chives before serving. Leftovers taste even better the next day, as the flavors meld together.
Variations
- Add Bacon: For a smoky twist, cook 4 slices of bacon until crisp, crumble, and stir into the beef before serving. The salty crunch pairs beautifully with the creamy sauce.
- Make It Spicy: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño along with the onions for a gentle heat that cuts through the richness.
- Use Chicken: Swap the beef chuck for boneless, skinless chicken thighs. Cook on low for 6 hours or until the chicken is tender and reaches 165°F (74°C).
- Vegetarian Option: Replace the beef with extra mushrooms and add a can of drained chickpeas for protein. Use mushroom soup and vegetable broth. Cook on low for 4 hours.

This recipe is perfect for meal prep. Assemble the ingredients in the Crockpot insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You can also freeze the cooked dish for up to 3 months in a freezer-safe container.
Serving ideas
Serve the beef bites hot, ladled over toasted brioche slices or your favorite crusty bread. The bread soaks up the rich, creamy sauce, making each bite satisfying. A simple green salad with a tangy vinaigrette would balance the richness nicely.
For a heartier meal, serve over egg noodles, mashed potatoes, or steamed rice. The sauce clings to the starch, creating a comforting bowl.
Garnish with fresh parsley or chives for a pop of color. This dish is also great for entertaining—set out the Crockpot and let guests help themselves.

Gruyère Cream Mushroom Beef Bites: Easy Crockpot Dinner

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup diced white onion
- 8 oz cream cheese, softened
- 1 cup shredded Gruyère cheese
- 8 oz sliced mushrooms
Instructions
- Place the cubed beef chuck into the bottom of the Crockpot. Pour the condensed cream of mushroom soup over the beef, then scatter the diced white onion evenly on top. Add the sliced mushrooms if using. Do not stir.
- Drop the softened cream cheese block on top of the beef mixture, then sprinkle the shredded Gruyère cheese over everything. The cream cheese will melt during cooking, creating a rich sauce.
- Cover the Crockpot and cook on low for 8 hours or on high for 4 hours, until the beef is fork-tender and the sauce is bubbling. Do not lift the lid during the first few hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- After cooking, check that the beef is fork-tender and has reached an internal temperature of at least 145°F (63°C). If not, continue cooking for another 30 minutes and check again. Let it rest for 3 minutes before slicing.
- Turn off the Crockpot and let the beef rest for at least 3 minutes before serving. This allows the juices to redistribute, making the meat even more tender.
- Ladle the beef and sauce over toasted brioche slices or your favorite bread. Serve hot, with extra Gruyère on top if desired.
