Before you start

Before you begin, ensure your Crockpot is clean and placed on a level, heat-resistant surface. Take your beef chuck roast out of the refrigerator about 20 minutes before you plan to start, which helps it cook more evenly.

While the beef rests, peel and mince the fresh garlic cloves finely to ensure the flavor distributes evenly throughout the pot.

Have your measuring tools ready and verify that your dried oregano is fresh and aromatic. Having all ingredients prepped and ready to go will make the assembly process take less than five minutes, allowing you to get the slow cooker running quickly.

Ingredients at a glance (6)
  • 3 lb beef chuck roast
  • 80 ml fresh lemon juice
  • 2 tbsp dried Greek oregano
  • 8 cloves garlic, minced
  • 1/2 tsp cinnamon
  • 1 stick olive-oil butter

Instructions

Preparation and Seasoning

  1. Season the Beef
Place the 3-pound beef chuck roast into the ceramic Crockpot. Pour the fresh lemon juice over the meat, then rub the dried Greek oregano, minced garlic, and cinnamon evenly over the entire surface of the beef. Add the stick of olive-oil butter on top of the roast to ensure a rich base for the cooking liquid.
Look for The beef should be well-coated in the herb and spice mixture before closing the lid.
Tip Ensure the garlic is evenly distributed around the roast for consistent flavor throughout the cooking process.

The beef should be sitting comfortably in the Crockpot, generously coated in the lemon juice, minced garlic, herbs, and spices. The butter should be placed on top of the roast. The kitchen should smell faintly of fresh oregano and garlic, and the setup should look ready for the long, slow transformation ahead.

Slow Cooking

  1. Slow Cook the Roast
Cover the Crockpot with its lid and set it to cook on the LOW setting for 8 hours. Allow the roast to simmer undisturbed until it reaches an internal temperature of 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before proceeding to shredding.
Look for The beef should look very soft and be easily pierced with a fork after the full cooking time.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Avoid lifting the lid frequently, as each time you open the Crockpot, the cooking time increases by about 20 minutes.

At the end of the 8-hour cooking cycle, the beef should be significantly smaller in volume and extremely tender. The liquid at the bottom of the pot should be fragrant and rich, having combined with the rendered fat and spices to create a savory, aromatic jus that will coat the shredded meat.

Shredding and Finishing

  1. Shred and Serve
Once the cooking time is complete, use two forks to shred the beef directly inside the Crockpot. Ensure the shredded meat is thoroughly mixed with the flavorful lemon-garlic herb jus. Let the meat rest for at least 5 minutes before serving to allow the juices to settle and redistribute throughout the fibers, resulting in the most succulent bite possible.
Look for The beef should fall apart effortlessly into thin, juicy strands.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the jus is too thin, you can skim off excess fat before shredding, though the fat adds flavor to the meat.

The beef should fall apart into succulent strands with minimal pressure from your forks. The final mixture should look glossy and well-integrated with the lemon-herb juices. The aroma should be intensely savory with a bright, citrusy finish, signaling that the dish is ready to be served immediately in warm pita bread.

Common mistakes

A common mistake is opening the lid too often during the 8-hour cooking time. Every time the lid is removed, heat escapes and the cooking time is extended, which can lead to uneven results.

Another mistake is using too little liquid; while the beef releases its own juices, the lemon juice provided is crucial for both flavor and the chemical tenderization process. Finally, do not rush the shredding process; take your time to ensure the meat is fully coated in the cooking juices for the best possible flavor in every single bite.

How to tell it’s done

The beef is fully done when it reaches an internal temperature of at least 145°F (63°C). You will know it is ready because the meat will offer no resistance when pulled apart with two forks. If the beef still feels firm or tough, continue cooking for another 30 minutes, as different slow cookers vary in heat intensity.

The final texture should be moist and tender, never dry or stringy. Always let the meat rest for at least 5 minutes before serving to ensure the juices are fully absorbed into the meat fibers.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
