Tips for success
To achieve the perfect texture, make sure the cornbread and biscuits are well-crumbled but not reduced to powder. Larger crumbs give the dressing a more interesting mouthfeel.
If you prefer a firmer dressing, use slightly less stock; for a softer, more spoonable texture, add a bit more. You can also add a tablespoon of sugar to the cornbread if you like a hint of sweetness.
For extra flavor, consider adding cooked sausage or bacon, but note that this will change the dish from a side to a heartier main. You can also add sautéed mushrooms or chopped pecans for crunch.
If you want a spicier kick, add a pinch of cayenne or a few dashes of hot sauce. The dressing is versatile, so feel free to adapt it to your taste.
Variations
- Turkey Sausage Dressing: Add 1 pound of cooked, crumbled turkey sausage to the dressing mixture before slow cooking. This adds protein and a savory depth that pairs well with poultry.
- Mushroom and Herb Dressing: Sauté 8 ounces of sliced mushrooms with the trinity and add 1 tablespoon of fresh thyme and 1 tablespoon of fresh sage. This gives an earthy, aromatic twist.
- Spicy Cajun Dressing: Add 1 teaspoon of Cajun seasoning and 1/2 teaspoon of cayenne pepper to the mixture. Use andouille sausage instead of biscuits for a smoky, spicy kick.
- Apple and Pecan Dressing: Fold in 1 cup of diced apple and 1/2 cup of toasted pecans before slow cooking. This adds a sweet crunch that complements the savory dressing.

The dressing pairs beautifully with green bean casserole, mashed potatoes, and sweet potato casserole. For a casual meal, enjoy it as a main dish with a side of collard greens or a simple salad.
For a festive presentation, transfer the dressing to a large serving platter and garnish with additional fresh parsley or sage leaves. Drizzle with warm giblet gravy or turkey jus for extra richness. If you have leftovers, use them to make a delicious Thanksgiving sandwich with turkey, cranberry sauce, and a little mayonnaise.

Slow-Cooker Southern Cornbread Dressing

Ingredients
- 8 cups skillet cornbread, crumbled
- 4 buttermilk biscuits, crumbled
- 2 cups sautéed trinity (onion, celery, bell pepper)
- 1 stick unsalted butter, melted
- 2 tsp poultry seasoning
- 3 large eggs, lightly beaten
- 3 cups rich chicken stock
- fresh chopped parsley, for garnish, to taste
Instructions
- Crumble the skillet cornbread and buttermilk biscuits into a large mixing bowl. Ensure the pieces are evenly crumbled but not too fine—you want some texture. Set aside.
- Heat a small skillet over medium heat and sauté the onion, celery, and bell pepper in a little butter or oil until softened, about 5 minutes. This step is optional but adds depth to the dressing.
- Add the sautéed trinity, melted butter, poultry seasoning, and beaten eggs to the bowl with the cornbread and biscuits. Stir gently with a wooden spoon until everything is well combined.
- Pour the rich chicken stock over the cornbread mixture. Stir well to incorporate. The mixture should be moist but not soupy—add more stock if needed, but the video calls for 3 cups.
- Spoon the dressing mixture into a 6-quart slow cooker. Spread it evenly with a spatula or spoon. It will fill the crock about three-quarters full.
- Cover the slow cooker and set it to LOW. Cook for 4 hours, without lifting the lid, until the center is set and the edges are golden brown and slightly caramelized.
- After 4 hours, insert a knife into the center of the dressing. It should come out clean, and the internal temperature should reach 165°F (74°C) if using eggs. The top should be golden brown.
- Scoop generous portions of the dressing onto plates. Drizzle with warm giblet gravy if desired, and sprinkle with fresh chopped parsley for a bright finish.
