Tips for success
For the most dramatic molten center, use large chocolate chunks rather than small chips. Chunks create pockets of melted chocolate that pool out when the cookie is broken. If you want an extra-gooey texture, press a few extra chocolate chunks onto the top of each dough ball just before baking.
This also makes the cookies look more appealing. Let the cookies cool for at least 5 minutes on the baking sheet before moving them; this allows the centers to set slightly and makes them easier to handle.
To achieve a perfect craggy top, do not smooth the dough balls after scooping. The rough bumps and crevices will caramelize in the oven, creating a beautiful, textured surface.
If you prefer a softer, chewier cookie, reduce the baking time by 1-2 minutes. For a crisper cookie, bake for an additional minute. Always use parchment paper to prevent sticking and to make cleanup easier.
Variations
- Dark chocolate: Swap the milk chocolate for dark chocolate chunks (60-70% cocoa) for a less sweet, more intense flavor. The cookies will have a deeper, more sophisticated taste.
- Add nuts: Fold in 1 cup of toasted walnuts or pecans along with the chocolate. The nuts add crunch and a savory note that balances the sweetness.
- Sea salt finish: Sprinkle a pinch of flaky sea salt on top of each cookie just before baking. The salt enhances the chocolate and adds a pleasant contrast.
- Double chocolate: Replace 1/4 cup of the all-purpose flour with 1/4 cup of unsweetened cocoa powder. The result is a rich, chocolatey cookie with a fudgy texture.

Store leftover cookies in an airtight container at room temperature for up to 3 days. To maintain their gooey texture, reheat them in a 300°F (150°C) oven for 5 minutes before serving. Do not microwave, as this can make the cookies tough. If storing unbaked dough, keep it in the freezer for up to 3 months in an airtight container or zip-top bag.
The dough can be prepared and scooped into balls, then frozen for up to 3 months. When ready to bake, place the frozen dough balls on a parchment-lined baking sheet and bake directly from the freezer, adding 2-3 minutes to the baking time.
This makes it easy to enjoy fresh, warm cookies anytime. You can also refrigerate the dough balls for up to 3 days, but they will not be as firm, so reduce the baking time slightly.
Serving ideas
These cookies are best served warm, within 15 minutes of baking, when the chocolate is still molten and the centers are soft and gooey. Pair them with a glass of cold milk or a scoop of vanilla ice cream for a classic dessert. The contrast between the crisp edges and the tender center is most pronounced when the cookies are fresh from the oven.
For a more indulgent presentation, stack two cookies with a scoop of ice cream in between to make an ice cream sandwich. Or simply place a cookie on a plate and drizzle with a little warm caramel sauce.
The cookies are also delicious crumbled over vanilla ice cream or used as a base for a sundae. However you serve them, these cookies are sure to impress.

Gooey Molten Chocolate Chip Cookies

Ingredients
- 1 cup cold unsalted butter, cubed
- 1 cup dark brown sugar, packed
- 3 tbsp white sugar
- 1 cold large egg
- 1 cold large egg yolk
- 1 tsp vanilla bean paste
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp kosher salt
- 12 oz milk chocolate chunks or chips
Instructions
- Place the cold cubed butter in the bowl of a stand mixer fitted with the paddle attachment. Beat on high speed for 2 minutes until the butter is broken up and slightly creamy. Add the dark brown sugar and white sugar, then beat on high for another 2 minutes until the mixture is light and fluffy. Scrape down the sides of the bowl. Add the cold egg, cold egg yolk, and vanilla bean paste. Beat on medium speed until fully incorporated, about 1 minute.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and kosher salt. With the mixer on low speed, gradually add the dry ingredients to the butter mixture, mixing just until no streaks of flour remain. Do not overmix. Fold in the milk chocolate chunks with a spatula until evenly distributed. The dough will be thick and slightly sticky.
- Use a large cookie scoop or a kitchen scale to portion the dough into 4-ounce balls. Each ball should be about the size of a generous golf ball. Place the dough balls on a parchment-lined tray or plate, spacing them slightly apart. If the dough is too soft to hold its shape, refrigerate for 15 minutes before scooping.
- Place the tray of dough balls in the freezer and freeze for at least 2 hours, or until the dough is firm to the touch. Freezing solid is essential for achieving the thick, gooey center and craggy edges. The dough balls can be frozen for up to 3 months if stored in an airtight container.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Place the frozen dough balls on the prepared sheet, spacing them at least 3 inches apart to allow for spreading.
- Bake the cookies for 17 minutes, or until the edges are golden amber and the tops are set but still slightly soft in the center. The cookies will look puffed and the centers may appear slightly underdone, but they will continue to set as they cool. For a more molten center, bake for 15-16 minutes; for a firmer center, bake for 18-19 minutes.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes. The centers will continue to set during this time. Transfer the cookies to a wire rack and serve warm, while the chocolate is still molten. To reheat leftover cookies, place them in a 300°F (150°C) oven for 5 minutes.
