Tips for success
For the best texture, use chickpeas that are cooked but still firm. Overcooked chickpeas can turn mushy during roasting. If using canned, rinse them thoroughly to remove excess sodium.
To enhance the smoky flavor, you can add a pinch of smoked paprika along with the Urfa chili. The dish is quite versatile: you can add other vegetables like zucchini or eggplant, but keep the total volume similar to maintain the right sauce-to-solid ratio.
When tossing the ingredients, use two large spoons to gently mix, ensuring the chickpeas stay intact. If you prefer a spicier dish, add a little more Urfa chili or a pinch of cayenne.
The flatbread is essential for scooping, so warm it in the oven or on a skillet before serving. For a more substantial meal, serve the casserole over rice or with a side of yogurt (if not vegan) to balance the heat.
Variations
- Add Spinach: Stir in 2 cups of fresh spinach during the last 5 minutes of the uncovered roasting. The leaves will wilt into the sauce, adding color and nutrients. This is a great way to use up leftover greens.
- Make it Spicier: Increase the Urfa isot chili flakes to 1 1/2 teaspoons, or add a finely chopped fresh chili pepper along with the other vegetables. For extra heat, serve with a drizzle of hot sauce.
- Add Meat: For a non-vegetarian version, add 1/2 pound of cooked, shredded chicken or lamb during the last 10 minutes of roasting. This turns the casserole into a heartier main dish.
- Baked Eggs: Make wells in the casserole after the covered baking time and crack 4 eggs into them. Roast uncovered for the final 15 minutes until the eggs are set. Serve with flatbread for a delicious breakfast or brunch.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water if needed to loosen the sauce.
- Freezer
- The baked casserole freezes well for up to 3 months. Cool completely, transfer to a freezer-safe container, and thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 10-15 minutes, or in the microwave on high for 2-3 minutes, stirring halfway. Add a little water if the dish seems dry.
Leftover casserole can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of water to restore moisture. The flavors will continue to meld, making it even tastier the next day.
You can assemble the casserole up to a day ahead, cover it with the wet parchment, and refrigerate. When ready to bake, add a few extra minutes to the covered cooking time since the dish will start cold. Alternatively, you can fully bake the casserole, let it cool, and refrigerate. Reheat in a 350°F (175°C) oven until warmed through.
Serving ideas
Serve the casserole hot, straight from the oven, with warm flatbread on the side. The flatbread is perfect for scooping up the chickpeas and vegetables, and it soaks up the delicious sauce.
You can also serve it over rice or with a simple green salad for a lighter meal. For a traditional Turkish touch, offer a bowl of plain yogurt to dollop on top, though this is optional.
This dish is satisfying enough to be a main course, but it also works well as a side dish alongside grilled chicken or lamb. If serving as a side, you can double the recipe and bake in a larger dish.
The caramelized edges are the most prized part, so be sure to scrape them up when serving. Garnish with fresh parsley or mint if you like, though the video doesn't include any.

Golden Urfa Chickpea Casserole with Flatbread

Ingredients
- 3 cups cooked chickpeas
- 2 onions, sliced
- 3 tomatoes, chopped
- 1 red kapya pepper, chopped
- 2 green peppers, chopped
- 3 cloves garlic, sliced
- 1 tbsp red pepper paste
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp Urfa isot chili flakes
- 1 tsp ground cumin
- 1 tsp salt
- 100 ml extra virgin olive oil
- warm flatbread, for serving
Instructions
- Preheat the oven to 400°F (200°C). Place the cooked chickpeas in a large round glass baking dish. Add the sliced onions, chopped tomatoes, chopped red kapya pepper, and chopped green peppers. Scatter the sliced garlic over the top.
- In a small bowl, stir together the red pepper paste, black pepper, paprika, Urfa isot chili flakes, cumin, and salt. Sprinkle this spice mixture evenly over the chickpeas and vegetables.
- Drizzle the extra virgin olive oil over the entire dish. Use two spoons to toss everything thoroughly, ensuring every chickpea and vegetable piece is glossy and well coated with the oil and spices.
- Crumple a sheet of parchment paper, then wet it under running water and squeeze out the excess. Uncrumple and place it directly over the baking dish, tucking the edges under the rim. Transfer to the preheated oven and bake for 30 minutes.
- After 30 minutes, carefully remove the dish from the oven. Remove the parchment, stir the chickpea mixture well, and return the dish to the oven uncovered. Roast for another 15 minutes, until the edges are caramelized and the liquid has reduced slightly.
- Remove the casserole from the oven and let it stand for 2 minutes. Serve hot with warm flatbread for scooping.
