Before you start

Before starting, gather all ingredients and equipment. Cut the eggplants into 3-inch cylinders and score the tops. Salt them and let them sit while you prepare the filling. Dice the onion and sweet peppers, mince the garlic, and slice the cherry tomatoes and green pepper.

Have the tomato broth hot and ready. Preheat the oven to 400°F (200°C). Prepare a piece of parchment paper large enough to cover the baking dish, and wet it under the tap, shaking off excess water.

Ingredients at a glance (16)
  • 4 medium eggplants
  • 1/4 cup olive oil, for frying
  • 400 g ground beef
  • 1 onion, diced
  • 2 sweet peppers, diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp salt, plus more to taste
  • 8 cherry tomatoes, sliced
  • 1 green pepper, cut into rings
  • 1 1/2 cups hot tomato broth
  • 1 cup vermicelli rice noodles
  • 2 cups long-grain rice
  • 2 tbsp butter
  • 4 cups water

Instructions

Prep and Sear the Eggplant

  1. Prep the Eggplant
Cut the eggplants crosswise into 3-inch cylinders, then score the cut tops with a cross-hatch pattern, about 1/2 inch deep. Sprinkle with salt and let sit for 10 minutes to draw out bitterness. Pat dry with paper towels.
Look for The eggplant cylinders hold their shape and the cross-hatch cuts are visible.
Tip Salting draws out moisture and helps the eggplant brown better.
  2. Fry the Eggplant
Heat the olive oil in a large skillet over medium-high heat. Add the eggplant cylinders in a single layer and fry for 2-3 minutes per side, until golden and slightly tender. Transfer to a rectangular baking dish, arranging them upright.
Look for The eggplant is golden on all sides but still holds its shape.
Tip Do not overcrowd the pan; fry in batches if needed.

After this phase, the eggplant cylinders are golden on all sides, with visible cross-hatch marks. They should be slightly tender but still hold their shape. The kitchen smells of fried eggplant and olive oil.

The filling ingredients are prepped and ready to go. Before moving on, ensure the eggplants are arranged upright in the baking dish and the skillet is ready for the beef.

Cook the Filling and Assemble

  1. Cook the Beef Filling
In the same skillet, add the ground beef and cook over medium-high heat, breaking it up with a spoon. Add the diced onion, sweet peppers, garlic, tomato paste, cumin, and salt. Cook until the beef is browned and the vegetables are soft, about 8 minutes.
Look for The beef is browned and the vegetables are softened and aromatic.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a wooden spoon to break the beef into small crumbles.
  2. Stuff the Eggplant
Spoon the beef filling into each eggplant cylinder, packing it gently. Top each with a slice of cherry tomato and a ring of green pepper.
Look for The filling mounds slightly above the eggplant tops.
Tip Pack the filling firmly so it stays in place during baking.
  3. Add Broth and Bake
Pour the hot tomato broth around the base of the eggplants, not over the tops. Cover the dish with wet parchment paper and bake at 400°F (200°C) for 30 minutes, until the eggplants are fork-tender and the broth is bubbling.
Look for The broth bubbles around the eggplants and the tops are golden.
Tip Wet the parchment paper under the tap and shake off excess before covering.

The ground beef is browned and seasoned, with the onions and peppers softened. The filling is aromatic with cumin and garlic. The eggplants are stuffed and topped with tomato and pepper. The dish is ready for the oven. The broth is poured around the base, and the wet parchment is in place. The oven is preheated and ready.

Bake and Serve

  1. Make the Rice Pilaf
While the eggplants bake, melt the butter in a saucepan over medium heat. Add the vermicelli noodles and toast, stirring, until golden. Add the rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and the liquid is absorbed.
Look for The vermicelli is golden and the rice is fluffy and separate.
Tip Do not stir the rice while it simmers to keep the grains intact.
  2. Rest and Serve
Remove the eggplant dish from the oven and let it rest for 5 minutes. To serve, invert a cup mold of the rice pilaf onto each plate, then place a stuffed eggplant alongside. Spoon some of the tomato broth over the top.
Look for The eggplants are tender and the rice holds its molded shape.
Tip Use a small bowl or cup to mold the rice for a neat presentation.

The eggplants are fork-tender and the broth is bubbling. The rice pilaf is fluffy and the vermicelli is golden. The kitchen is filled with the rich aroma of baked eggplant and tomato. The dish is rested and ready to be plated. The rice is molded and served alongside the eggplant, with a spoonful of broth over the top.

Common mistakes

A common mistake is not salting the eggplant long enough, which can result in a bitter taste and excess moisture. Another is overcrowding the skillet when frying, which steams the eggplant instead of browning it. When stuffing, avoid overpacking the filling, as it can spill out during baking.

Also, be careful not to pour the broth over the tops of the eggplants, as this can wash away the toppings; pour it gently around the base. Finally, do not skip the wet parchment cover, as it is essential for creating the steamy environment that keeps the dish moist.

How to tell it’s done

The dish is done when the eggplants are fork-tender, meaning a fork easily pierces the flesh without resistance, and the broth is bubbling around the edges. The internal temperature of the ground beef filling should reach 160°F (71°C) to ensure it is fully cooked.

The tops of the eggplants should be golden and slightly caramelized, and the filling should be hot and steaming. Let the dish rest for 5 minutes before serving to allow the juices to settle.

  • Ground meat: 160°F (71°C) in the thickest part
