Tips for success

For the best texture, use chicken breast tenders rather than whole breasts—they cook more evenly and stay moist. If you only have chicken breasts, cut them into 1-inch strips.

When layering, make sure the chicken is in a single layer to promote even cooking. Avoid stirring the mixture before cooking; the layers help the chicken cook properly and the cheese to melt into a smooth sauce.

To enhance the flavor, you can add a pinch of garlic powder or a few sprigs of fresh thyme to the slow cooker before cooking. However, the recipe is delicious as written and needs no additions.

If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking to let some moisture evaporate. Serve immediately for the best texture.

Variations

  • Mushroom Swiss: Add 8 oz sliced mushrooms along with the green beans. The mushrooms will release moisture and add an earthy flavor that pairs well with the Swiss cheese.
  • Cheddar Broccoli: Swap the green beans for broccoli florets and use sharp cheddar instead of Swiss. The broccoli cooks faster, so add it during the last 30 minutes of cooking.
  • Creamy Ranch Chicken: Replace the cream of onion soup with cream of chicken soup and add 1 packet of ranch seasoning mix. Use Colby-Jack cheese instead of Swiss for a different flavor.
  • Garlic Parmesan: Add 2 minced garlic cloves and 1/2 cup grated Parmesan cheese along with the Swiss cheese. Use cream of mushroom soup instead of onion for a milder base.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Cool the dish to room temperature within 2 hours of cooking, then refrigerate. Reheat gently in the microwave or on the stovetop, adding a splash of milk or chicken broth if the sauce has thickened too much.

This recipe can be assembled up to 12 hours ahead. Layer the chicken, green beans, soup, sour cream, and cheese in the slow cooker insert, cover, and refrigerate.

When ready to cook, place the insert in the slow cooker and cook on low for 4 to 5 hours, adding about 30 minutes to the cooking time to account for the cold start.

Serving ideas

Serve the chicken and green beans over a bed of creamy mashed potatoes, allowing the sauce to soak into the potatoes.

The dish also pairs well with steamed rice, buttered noodles, or a crusty baguette for dipping into the sauce. A simple green salad with a light vinaigrette can add freshness to balance the richness.

For a complete meal, consider adding a side of roasted vegetables or a simple cucumber salad. The dish is hearty enough to stand alone, but the sides help round out the plate. Garnish with chopped fresh parsley or chives for a pop of color, if desired.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, the dish can be assembled up to 12 hours in advance. Layer all ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, add about 30 minutes to the cooking time to account for the cold start. The dish can also be fully cooked and then reheated gently before serving.
Why does the sauce sometimes look curdled?
Curdling can happen if the sour cream is too low-fat or if the slow cooker temperature is too high. Use full-fat sour cream and cook on low, not high. Also, avoid stirring the mixture during the first few hours. If the sauce does curdle, it will still be safe to eat, but the texture may be less smooth.
Can frozen green beans be used instead of fresh?
Yes, frozen green beans work well. Thaw them in the refrigerator and drain thoroughly before adding to the slow cooker. Reduce the cooking time by about 30 minutes, as frozen beans cook faster. Avoid canned green beans, which will turn mushy.
What can be substituted for cream of onion soup?
Condensed cream of chicken or cream of mushroom soup are the best substitutes. If using cream of chicken, the flavor will be slightly different but still delicious. For a homemade option, make a quick white sauce with butter, flour, chicken broth, and onion powder.
How should leftovers be reheated?
Leftovers can be reheated in the microwave in 1-minute intervals, stirring in between, or on the stovetop over medium-low heat. Add a splash of milk or chicken broth to loosen the sauce if it has thickened too much. Reheat only the amount you plan to eat to avoid repeated warming.

Golden Swiss Green Bean Chicken Tenders Crockpot Dinner

Slow cooker chicken tenders and green beans in a creamy Swiss sauce

Ingredients

  • 2 lb chicken breast tenders
  • 1 lb fresh green beans, trimmed
  • 1 can (10.5 oz) condensed cream of onion soup
  • 1 cup sour cream
  • 2 cups shredded Swiss cheese
  • mashed potatoes, for serving

Instructions

  1. Place the chicken breast tenders in an even layer in the bottom of a 7-quart slow cooker. Scatter the trimmed green beans around and between the chicken pieces, tucking them in so they are surrounded by the meat.
  2. Dollop the condensed cream of onion soup over the chicken and green beans, spreading it gently with a spoon to cover some of the chicken and beans. It does not need to be perfectly smooth—just distributed in large spoonfuls.
  3. Spoon the sour cream over the soup layer, then scatter the shredded Swiss cheese evenly over the top. Do not stir; the layers will meld as they cook.
  4. Cover the slow cooker and cook on low for 4 to 5 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). Avoid opening the lid during the first 3 hours to keep the heat steady.
  5. Once the chicken is cooked through, stir the mixture gently to combine the sauce. Taste and adjust with salt and pepper if needed, though the soup and cheese add plenty of seasoning.
  6. Spoon the chicken and green bean mixture over warm mashed potatoes on serving plates. Ladle extra sauce over the top and serve immediately.
