Tips for success

For the best texture, cut the cauliflower florets into uniform, bite-size pieces so they cook at the same rate as the chicken. If you prefer a thicker sauce, mash a few of the cooked cauliflower florets against the side of the slow cooker before stirring—they will naturally thicken the liquid.

You can also add a tablespoon of cornstarch mixed with cold water at the end if the sauce is too thin, but this is rarely necessary.

To make this dish even more hands-off, you can assemble everything in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and start cooking—just add 30 minutes to the cooking time because the ingredients are cold.

Leftovers are even better the next day, as the flavors continue to meld. Store in an airtight container in the refrigerator for up to 4 days.

Variations

  • Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until golden and add them with the cauliflower. The earthy flavor pairs beautifully with the Swiss cheese and cream of broccoli soup.
  • Use Chicken Thighs: Swap the tenderloins for boneless, skinless chicken thighs, cut into chunks. They are even more forgiving and stay moist during the long cook. Increase cook time to 5 hours on LOW.
  • Make It Spicy: Add 1/2 teaspoon red pepper flakes or a diced jalapeño with the cauliflower. A pinch of smoked paprika also adds a subtle warmth without heat.
  • Broccoli Instead of Cauliflower: Use fresh broccoli florets in place of cauliflower. They will be a bit softer after the long cook, so add them during the last 30 minutes if you prefer more texture.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk or broth to restore the creamy texture.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling.

Let the dish cool completely before storing. Transfer to an airtight container and refrigerate for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of milk or chicken broth to loosen it. For best flavor, bring leftovers to room temperature for 15 minutes before reheating.

Assemble the raw ingredients in the slow cooker insert up to 24 hours ahead, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and add 30 to 45 minutes to the cooking time.

Alternatively, cook the entire dish, cool, and refrigerate for up to 4 days; reheat gently before serving. The dish also freezes well for up to 3 months—thaw overnight in the refrigerator before reheating.

Serving ideas

Serve the chicken and cauliflower hot over a bed of creamy mashed potatoes. The sauce acts like a gravy, soaking into the potatoes and tying the whole plate together.

A simple green salad with a tangy vinaigrette makes a bright counterpoint to the rich, cheesy sauce. For a low-carb option, serve over steamed rice or cauliflower rice instead of potatoes.

This dish also works well over egg noodles, polenta, or even toasted crusty bread. For a more substantial meal, add a side of roasted green beans or sautéed spinach. If you have extra sauce, spoon it over the side—it is too good to waste. Garnish with a sprinkle of fresh chives or parsley for a pop of color, though the dish is delicious as is.

Frequently asked questions

Can this recipe be made with frozen chicken tenders?
Yes, frozen chicken tenders can be used, but the cooking time will increase by about 1 hour on LOW. The internal temperature must still reach 165°F (74°C). Do not thaw the chicken first—adding it frozen to the slow cooker is safe as long as it reaches the proper temperature.
Why does the sauce sometimes look curdled?
Curdling usually happens if the sour cream is added at the very beginning and the slow cooker is set to HIGH, or if the dish cooks too long. To prevent this, add the sour cream during the last 30 minutes of cooking, or stir it in just before serving. The dish is still safe to eat, but the texture will be less smooth.
Can the cauliflower be swapped for another vegetable?
Broccoli is a natural substitute, but it will become very soft after 4 hours. For a firmer texture, add broccoli during the last 30 minutes. Other options include sliced carrots or bell peppers—add them at the beginning as they take longer to soften.
How can the dish be made gluten-free?
Use a gluten-free condensed cream of broccoli soup (or cream of chicken soup) and ensure the sour cream and Swiss cheese are certified gluten-free. Serve over mashed potatoes made without wheat-based thickeners. All other ingredients are naturally gluten-free.
What can be served instead of mashed potatoes?
The creamy sauce is delicious over rice, egg noodles, polenta, or toasted bread. For a lower-carb option, use cauliflower rice or steamed green beans. The sauce also works well as a topping for baked potatoes.

Golden Swiss Cauliflower Chicken Tenders: 4-Ingredient Slow Cooker Dinner

Slow cooker filled with creamy Swiss cauliflower chicken tenders, garnished with fresh herbs

Ingredients

  • 1 1/2 lb chicken breast tenderloins
  • 4 cups cauliflower florets (from 1 medium head)
  • 1 can (10.5 oz) condensed cream of broccoli soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded Swiss cheese (about 6 oz)
  • Mashed potatoes, for serving

Instructions

  1. Place the chicken breast tenderloins in a single layer in the bottom of a 7-quart slow cooker. Scatter the cauliflower florets evenly around and over the chicken. No need to stir—the layers will meld as they cook.
  2. Spoon the condensed cream of broccoli soup over the center of the chicken and cauliflower. Use the back of the spoon to spread it slightly, but it does not need to cover every piece.
  3. Dollop the sour cream over the soup, then scatter the shredded Swiss cheese evenly across the top of everything. The cheese will melt and blend into the sauce during cooking.
  4. Cover the slow cooker and cook on LOW for 4 hours, or on HIGH for 2 to 3 hours, until the chicken is fork-tender and registers 165°F (74°C) in the thickest piece. Stir gently once halfway through, if possible.
  5. Gently stir the mixture to combine the sauce, cheese, and chicken. Check that the chicken is cooked through by cutting into the thickest tenderloin—it should be opaque and reach 165°F (74°C).
  6. Spoon a generous portion of creamy mashed potatoes onto each plate. Top with the chicken, cauliflower, and a ladleful of the Swiss–sour cream sauce. Serve hot.
