Before you start

Before starting, make sure the chicken tenderloins are thawed if frozen. Halve the baby Yukon Gold potatoes so they are uniform in size. Shred the Swiss cheese if it isn't pre-shredded; pre-shredded cheese often contains anti-caking agents that can affect melting, so shredding your own yields a smoother sauce.

Have the soup, sour cream, and cheese measured and ready. No need to preheat the slow cooker—just layer the ingredients straight into the cold insert.

Ingredients at a glance (5)
  • 2 lb chicken breast tenderloins
  • 1 1/2 lb baby Yukon Gold potatoes, halved
  • 1 can (10.5 oz) condensed golden mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded aged Swiss cheese

Instructions

Layer and Top

  1. Layer the Chicken and Potatoes
Place the chicken breast tenderloins in a single layer in the bottom of a 6-quart slow cooker. Scatter the halved baby Yukon Gold potatoes around and over the chicken, so they are nestled among the meat.
Look for The chicken and potatoes should be evenly distributed in the slow cooker.
Tip There is no need to season at this point; the soup and cheese will add plenty of flavor.
  2. Add the Golden Mushroom Soup
Pour the condensed golden mushroom soup over the chicken and potatoes, using a spoon to spread it evenly so it covers most of the surface.
Look for The soup should coat the top of the chicken and potatoes.
Tip Don't stir; the layers will meld during cooking.
  3. Top with Sour Cream and Swiss Cheese
Dollop the sour cream over the soup, then sprinkle the shredded Swiss cheese evenly over the top.
Look for The top should be covered with sour cream and cheese.
Tip The cheese will melt into the sauce as it cooks.

After layering, the slow cooker should show a neat arrangement of chicken and potatoes, topped with soup, sour cream, and cheese. The colors are varied—pink chicken, golden potatoes, and pale soup with white sour cream and yellow cheese. The ingredients should be evenly distributed, and the top should be mostly covered.

Slow Cook

  1. Cook on Low
Cover the slow cooker and cook on low for 6 to 7 hours, until the chicken is fork-tender and the potatoes are easily pierced with a fork. Do not lift the lid during the first 5 hours to keep the heat steady.
Look for The sauce should be bubbling gently around the edges.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Cooking on low ensures the chicken stays moist and the potatoes cook through without becoming mushy.

During cooking, the slow cooker will begin to steam and bubble gently. The cheese will melt and blend with the soup and sour cream, creating a creamy sauce.

The chicken will turn opaque and tender, and the potatoes will soften. The aroma of savory mushroom and cheese will fill the kitchen. Avoid opening the lid to check too often.

Finish and Serve

  1. Stir and Serve
Once the chicken is cooked through and tender, stir the sauce gently to combine the melted cheese and sour cream. Serve hot, spooning the creamy sauce over the chicken and potatoes.
Look for The sauce should be smooth and glossy, with the cheese fully melted.
Tip If the sauce seems thin, let it sit uncovered for 10 minutes to thicken slightly.

At the end, the sauce should be thick and creamy, with no visible separate pools of fat. The chicken should be fork-tender, and the potatoes should be soft but not falling apart. The sauce should coat the back of a spoon. Serve immediately, spooning the sauce over each portion.

Common mistakes

A common mistake is lifting the lid too often during cooking, which lets out heat and extends the cooking time. Another is using chicken breasts instead of tenderloins; breasts can dry out if cooked too long.

If the potatoes are cut too large, they won't be tender when the chicken is done—keep them bite-sized. Finally, don't stir the ingredients before cooking; layering helps the chicken stay moist and the potatoes cook evenly.

How to tell it’s done

The dish is done when the chicken is fork-tender and reaches an internal temperature of 165°F (74°C) in the thickest part. The potatoes should be easily pierced with a fork, offering no resistance.

The sauce should be bubbling gently around the edges and have a smooth, glossy appearance. If the chicken shreds easily with a fork, it's perfectly cooked. Let the dish rest for 5 minutes before serving to allow the sauce to settle.

  • Poultry: 165°F (74°C) in the thickest part
