Tips for success
For the crispiest results, serve the börek within 30 minutes of baking. If you must hold them, keep them in a warm oven (200°F) for up to 30 minutes.
To reheat leftovers, place them on a baking sheet in a 350°F oven for 5-10 minutes until hot and crisp again. Avoid microwaving, as it will make the pastry soggy.
When working with yufka, keep the stack covered with a slightly damp kitchen towel. This prevents the sheets from drying and cracking. If a sheet tears, don't worry – you can patch it with another piece.
The glaze will help seal any cracks. Also, feel free to adjust the red pepper flakes to your heat preference. The filling is versatile; you can add fresh herbs like dill or mint if desired.
Variations
- Cheese and Herb: Replace the spinach with a mixture of chopped fresh dill, parsley, and mint. Use a combination of feta and ricotta for a creamier filling. Add a pinch of nutmeg for warmth.
- Meat Lover's: Brown 1/2 lb ground beef or lamb with onions, and season with salt, pepper, and paprika. Mix with a small amount of feta and use in place of the spinach filling.
- Spicy Potato: Sauté diced potatoes with onions and red pepper flakes until tender. Mash lightly and mix with feta and a little olive oil. Use as the filling for a hearty version.
- Sweet Version: Skip the savory filling and use a mixture of ground walnuts, cinnamon, and sugar. Brush with butter instead of the milk glaze, and drizzle with honey after baking.

Store leftover rose börek in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet and warm in a 375°F oven for 5-8 minutes until crisp. Avoid plastic wrap, which traps moisture and softens the pastry.

Serving ideas
Serve the rose börek warm as an appetizer, side dish, or light main course. They pair beautifully with a simple green salad dressed in lemon and olive oil, or with a bowl of yogurt for dipping.
The crisp pastry and savory filling are satisfying on their own, but a dollop of yogurt adds a creamy contrast.
For a brunch spread, arrange the roses on a large platter and garnish with fresh herbs. They are also excellent alongside soups or stews.
To make them a meal, serve with a side of roasted vegetables or a grain salad. The visual appeal makes them a conversation starter at any gathering.

Golden Spinach Feta Rose Börek: Crispy Flaky Pastry

Ingredients
- 1 cup milk
- 1/2 cup vegetable oil
- 1 egg
- 1 pinch salt
- 750 g fresh spinach, chopped
- 2 onions, diced
- 1 cup crumbled Ezine feta cheese
- 1/2 tsp red pepper flakes
- 1/4 tsp black pepper
- 1/4 cup olive oil
- 5 round yufka pastry sheets
- 1 egg, beaten (for egg wash)
- 2 tbsp toasted sesame seeds
Instructions
- In a glass bowl, whisk together the milk, vegetable oil, egg, and salt until fully blended and smooth. Set aside. In a large bowl, combine the chopped spinach, diced onions, crumbled feta, red pepper flakes, black pepper, and olive oil. Toss well to mix thoroughly.
- Stack the 5 yufka sheets on a clean work surface. Using a sharp knife, cut the stack into quarters, creating 20 triangular pieces. Brush each triangle lightly with the milk glaze, covering the surface evenly.
- Place a spoonful of the spinach-feta filling along the wide edge of one triangle. Roll the pastry tightly from the wide end toward the point, forming a thin cigar. Repeat with the remaining triangles and filling.
- Take one rolled cigar and coil it tightly into a spiral, tucking the end underneath. Place the spiral seam-side down on a parchment-lined baking sheet. Repeat with all cigars, spacing them about 2 inches apart.
- Brush the top of each rose börek with the beaten egg wash, covering the exposed pastry. Sprinkle generously with toasted sesame seeds.
- Preheat the oven to 375°F (190°C). Bake the rose börek for 30 minutes, or until deep golden brown and crisp. The internal temperature of the egg wash should reach 160°F (71°C) to ensure the eggs are fully cooked.
- Remove from the oven and let rest on the baking sheet for 5 minutes. Serve warm, breaking open the flaky layers to reveal the steaming spinach-feta filling.
