Tips for success
For the best texture, make sure the butter is softened but not melted. If you are in a hurry, cut the butter into small cubes and let it sit for 15 minutes.
When rolling the dough balls, keep your hands slightly damp to prevent sticking. If the dough becomes too soft, chill it in the refrigerator for 10 minutes before shaping.
Toasting the sesame seeds before coating adds a deeper flavor. Spread them in a dry skillet over medium heat and stir frequently until they are fragrant and lightly golden, about 3 to 4 minutes.
Let them cool completely before using. You can also mix the nigella seeds with the sesame seeds for a more complex flavor.
Variations
- Spicy Kick: Add 1/2 teaspoon of cayenne pepper or red pepper flakes to the dough for a subtle heat that complements the nutty sesame seeds.
- Herb Infusion: Mix 1 tablespoon of dried rosemary or thyme into the flour for an aromatic twist. Reduce the salt slightly to balance the herbs.
- Cheesy Delight: Fold in 1/2 cup of finely grated Parmesan cheese with the flour. The cheese adds a savory umami flavor that pairs well with the sesame.
- Sweet Variation: Omit the salt and increase the sugar to 2 tablespoons. After baking, dust the crackers with confectioners' sugar for a sweet-savory treat.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to one month. Bring to room temperature before serving.
- Freezer
- Freeze in a freezer-safe container for up to three months. Thaw at room temperature and re-crisp in a 300°F (150°C) oven for 5 minutes.
- Reheat
- To re-crisp, place on a baking sheet and heat in a 300°F (150°C) oven for 5 to 10 minutes until crisp and fragrant.
Store the cooled crackers in an airtight container at room temperature for up to two weeks. They will maintain their crispness if kept away from moisture. If they soften, re-crisp them in a 300°F (150°C) oven for 5 to 10 minutes.
The dough can be prepared up to two days ahead and kept in the refrigerator. Let it come to room temperature before shaping. The baked crackers also freeze well for up to three months. Thaw at room temperature and re-crisp in the oven if needed.
Serving ideas
These marble crackers are wonderful served alongside a cheese board, with dips like hummus or baba ganoush, or simply as a snack on their own.
Their buttery flavor and crunchy texture pair beautifully with a glass of white wine or a light beer. They also make a great addition to a party platter, adding a savory, crunchy element that guests will love.
For a more elegant presentation, arrange the crackers in a decorative bowl and sprinkle with a little extra nigella seeds or flaky sea salt.
They can also be served with a bowl of olive oil for dipping, or crumbled over salads for added texture. However you serve them, these crackers are sure to be a hit.

Golden Sesame Marble Snack Crackers

Ingredients
- 200 g softened butter
- 100 ml vegetable oil
- 2 large eggs
- 1 tbsp salt
- 1 tsp sugar
- 1 tbsp vinegar
- 1 packet baking powder
- 500 g (4 cups) all-purpose flour
- 1 egg white
- 1/2 cup water
- 2 cups toasted golden sesame seeds
- 1 tbsp nigella seeds
Instructions
- In a large bowl, combine the softened butter, vegetable oil, eggs, salt, sugar, vinegar, and baking powder. Mix until smooth and creamy. Gradually add the flour, stirring until a soft, cohesive dough forms. Knead gently just until the dough comes together; avoid overworking.
- Pinch off small pieces of dough and roll them between your palms into tiny, hazelnut-sized marble balls. Place them on a tray as you work, keeping them evenly sized so they bake uniformly.
- In a shallow bowl, whisk the egg white with the water until frothy. This will help the seeds stick to the dough balls.
- Dip each dough ball into the egg white mixture, then roll it in the toasted sesame seeds and nigella seeds until fully coated. Shake off any excess and place the coated balls on a parchment-lined baking sheet, leaving a little space between them.
- Preheat the oven to 340°F (170°C). Arrange the coated dough balls on the prepared baking sheet. Bake for 30 minutes, or until the crackers are deeply golden, dry, and crisp all the way through.
- Remove the baking sheet from the oven and let the crackers cool completely on the sheet for about 10 minutes, then transfer to a wire rack to cool fully. They will continue to crisp as they cool.
