Before you start

Before starting, cut the cauliflower into bite-size florets and pat the chicken dry. Soften the cream cheese to room temperature by leaving it out for 30 minutes. Grate the Parmesan fresh from a wedge.

Gather your slow cooker, measuring cups, and a spatula. Have the egg noodles and butter ready for serving, but cook them only when the slow cooker is nearly done.

Ingredients at a glance (6)
  • 2 lb chicken breast tenderloins
  • 1 head cauliflower, cut into florets
  • 1 can (10.5 oz) condensed cream of broccoli soup
  • 8 oz cream cheese, softened
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • 12 oz buttered twisted egg noodles, for serving

Instructions

Layer the Ingredients

  1. Layer the Chicken and Cauliflower
Place the chicken breast tenderloins in a single layer in the bottom of a 6-quart slow cooker. Scatter the cauliflower florets around and between the chicken pieces. The ingredients should be arranged evenly so everything cooks at the same rate.
Look for The slow cooker base is filled with a neat layer of chicken and cauliflower.
Tip If the chicken tenderloins are very large, cut them in half so they cook evenly.
  2. Add the Soup
Spoon the condensed cream of broccoli soup over the chicken and cauliflower. Use a spatula to spread it evenly, covering as much of the surface as possible. It doesn't need to be perfect — the sauce will come together as it cooks.
Look for The soup forms a greenish-white layer over the meat and vegetables.
Tip Scrape the can clean to get every bit of soup.
  3. Top with Cheeses
Place the softened cream cheese in the center of the slow cooker. Sprinkle the freshly grated Parmigiano-Reggiano over the top. The cheeses will melt and blend into the sauce during cooking.
Look for The cream cheese sits as a white brick, dusted with Parmesan.
Tip Soften the cream cheese ahead of time for easier melting.

At this stage, the slow cooker holds a neat layer of chicken and cauliflower, topped with soup and cheese. The cream cheese sits in the center, and the Parmesan is scattered over the top.

The ingredients look fresh and colorful, with the soup creating a creamy coating. The setup is clean and ready for slow cooking.

Slow-Cook to Tender

  1. Cover and Cook on Low
Cover the slow cooker with its lid. Cook on LOW for 4 hours, or until the chicken is fork-tender and the cauliflower is soft. Do not open the lid during the first 3 hours to keep the heat inside.
Look for A rich, creamy aroma fills the kitchen after a few hours.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If using chicken thighs, they may need an extra 30 minutes.
  2. Check the Chicken Temperature
After 4 hours, check that the chicken is cooked through. Insert an instant-read thermometer into the thickest part of a tenderloin; it must register at least 165°F (74°C). The chicken should shred easily with a fork.
Look for The thermometer reads 165°F (74°C) or higher.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If not done, cover and cook for another 30 minutes.
  3. Stir the Sauce
Gently stir the sauce to combine the melted cream cheese and Parmesan into the soup. The sauce should be smooth, creamy, and coat the back of a spoon. Be careful not to break up the chicken too much.
Look for The sauce turns a pale golden color, smooth and glossy.
Tip Use a rubber spatula to scrape the sides of the slow cooker.

After four hours, the kitchen smells rich and savory. The chicken is fork-tender, the cauliflower is soft, and the sauce is bubbly and thickened. The cream cheese and Parmesan have melted into the soup, creating a smooth, golden gravy. The chicken is cooked through and reaches 165°F (74°C).

Finish and Serve

  1. Cook the Egg Noodles
While the slow cooker finishes, bring a large pot of salted water to a boil. Cook the twisted egg noodles according to package directions until al dente. Drain well and toss with butter. Keep warm until serving.
Look for The noodles are tender and glistening with butter.
Tip Reserve a cup of pasta water in case you want to thin the sauce.
  2. Serve Over Noodles
Divide the buttered noodles among plates. Use a slotted spoon to pile the chicken and cauliflower on top. Spoon extra sauce over each serving. Serve hot.
Look for Steam rises from the creamy, golden dish as it is served.
Tip The sauce thickens as it cools, so add a splash of hot water if needed.

The sauce is smooth and coats the back of a spoon. The buttered noodles are ready, and the chicken and cauliflower are piled on top, with extra sauce spooned over. The dish looks creamy, golden, and comforting, with steam rising. The flavors are rich, cheesy, and satisfying.

Common mistakes

A common mistake is lifting the lid too often, which lets out heat and extends cooking time. Resist the urge to stir for the first 3 hours. Another error is using pre-shredded Parmesan, which can turn the sauce gritty.

Also, do not add extra liquid — the soup and cheeses create enough sauce. Finally, if chicken pieces are larger than expected, check the temperature early and adjust.

How to tell it’s done

The dish is done when the chicken registers at least 165°F (74°C) on an instant-read thermometer and shreds easily with a fork. The cauliflower should be tender enough to pierce with a knife.

The sauce should be smooth and creamy, with no visible lumps of cream cheese. If the sauce seems thin, let it cook uncovered for 15 minutes to reduce.

  • Poultry: 165°F (74°C) in the thickest part
