Tips for success
To get the best sear on the meatballs, make sure the skillet is hot before adding them. Pat the meatballs dry if they're wet from the package. Use tongs to turn them gently to avoid breaking them.
If your skillet isn't large enough, cook the meatballs in two batches to ensure they brown properly without steaming. A non-stick skillet works best for easy release and cleanup.
For a thicker sauce, you can mash a few potato cubes against the side of the pan and stir them in — this naturally thickens the sauce without adding flour. If you prefer a thinner sauce, add a splash of water or broth.
Taste the stew before serving and adjust the salt and pepper if needed. The flavors will continue to develop as it rests, so a few minutes off the heat before serving is always a good idea.
Variations
- Add More Vegetables: Add a cup of green beans or peas during the last 10 minutes of simmering for extra color and nutrition. You can also swap the potatoes for sweet potatoes or add zucchini slices in the final 5 minutes.
- Make It Spicy: Increase the heat by adding a minced chili pepper or a teaspoon of red pepper flakes along with the onion. You can also use hot paprika instead of sweet, or add a drizzle of chili oil before serving.
- Herb Swap: Replace the parsley with fresh dill or cilantro for a different herbal note. A teaspoon of dried oregano or thyme added with the spices also works well, though fresh herbs are preferred for the finish.
- Use Chicken Meatballs: For a lighter option, use ground chicken or turkey meatballs. Season them well with garlic, cumin, and paprika. Cook them to an internal temperature of 165°F (74°C) and adjust the simmering time accordingly.

Store leftover stew in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the sauce has thickened too much. Let the stew cool to room temperature within 2 hours of cooking before refrigerating.
This stew can be made up to 2 days ahead. Prepare the recipe as directed, let it cool completely, then refrigerate in an airtight container.
Reheat gently on the stovetop over medium-low heat, stirring occasionally, until warmed through. The meatballs and vegetables will absorb more flavor as they sit, making it even more delicious the next day.
Serving ideas
Serve the stew in shallow bowls with a generous ladle of sauce over each portion. Pair it with crusty bread, rice, or bulgur pilaf to soak up the flavorful sauce.
A side of plain yogurt or a simple green salad with lemon vinaigrette would complement the richness nicely. Garnish with extra parsley just before serving for a fresh, vibrant finish.
This stew is hearty enough to stand alone as a complete meal, but it also works well as part of a larger spread. For a Turkish-inspired feast, serve it alongside meze plates like hummus, baba ghanoush, and stuffed grape leaves. The warm spices and comforting texture make it a crowd-pleaser for any season.

Golden Meatball and Potato Stew with Parsley

Ingredients
- 3 tbsp olive oil
- 20 spiced mini beef meatballs (misket köfte)
- 1 chopped onion
- 1 tbsp tomato paste
- 1 tbsp red pepper paste
- 2 cubed potatoes
- 2 sliced carrots
- 3 cups boiling hot water
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp sweet paprika
- 2 tbsp chopped fresh parsley
Instructions
- Heat the olive oil in a wide non-stick skillet over medium-high heat. Add the spiced mini beef meatballs in a single layer and cook, turning occasionally, until browned and golden on all sides, about 5 minutes. Remove the meatballs to a plate and set aside.
- In the same skillet, add the chopped onion and cook over medium heat, stirring occasionally, until softened and translucent, about 3 minutes. Add the tomato paste and red pepper paste, and stir constantly for 2 minutes until the mixture is fragrant and glossy, scraping up any browned bits from the bottom.
- Add the cubed potatoes and sliced carrots to the skillet, tossing them to coat with the onion-paste mixture. Pour in the boiling hot water, then add the salt, black pepper, and sweet paprika. Stir to combine.
- Return the seared meatballs to the skillet, nestling them among the vegetables. Bring the liquid to a gentle boil, then reduce the heat to medium-low, cover, and simmer for 20 minutes, or until the potatoes and carrots are fork-tender and the meatballs are cooked through.
- Remove the skillet from the heat. Sprinkle the chopped fresh parsley over the stew and stir gently. Ladle the steaming meatballs, potatoes, and carrots into shallow bowls, spooning extra sauce over the top. Serve hot.
