Tips for success
For perfectly round cookies, use a large cookie scoop and roll the dough balls between your palms until smooth. This helps them bake evenly.
If you prefer a crisper cookie, flatten the dough balls slightly before baking. For a more rustic look, leave them as is and let them spread naturally.
To enhance the lemon flavor, add a teaspoon of lemon extract along with the zest. You can also sprinkle a little flaky sea salt on top of each cookie before baking for a sweet-salty contrast.
If you want extra coconut flavor, toast the shredded coconut lightly before adding it to the dough—this deepens its nutty taste.
Variations
- Lime and Coconut: Replace the lemon zest with lime zest and add a tablespoon of lime juice for a tropical twist. The grape molasses can be swapped for honey to complement the lime.
- Dark Chocolate Chunks: Use dark chocolate chunks instead of white chocolate chips for a richer, less sweet cookie. The bitterness of dark chocolate pairs beautifully with the citrus and coconut.
- Almond Extract: Add 1/2 teaspoon of almond extract along with the eggs for a nutty undertone. This works especially well if you also replace the coconut with sliced almonds.
- Spiced Lemon: Add 1/2 teaspoon of ground cardamom and 1/4 teaspoon of ground ginger to the dry ingredients for a warm, aromatic spice note that complements the lemon and coconut.
Storage and make-ahead
- Fridge
- Store baked cookies in an airtight container at room temperature for up to 5 days, or refrigerate for up to 1 week.
- Freezer
- Freeze unbaked dough balls on a baking sheet, then transfer to a freezer bag for up to 3 months. Bake frozen, adding 2-3 minutes.
- Reheat
- Reheat baked cookies in a 300°F oven for 5-7 minutes to restore gooey centers, or microwave for 10-15 seconds.
Store the cookies in an airtight container at room temperature for up to 5 days. To keep them soft, add a slice of bread to the container; the cookies will absorb the moisture. For longer storage, freeze the baked cookies in a single layer in a freezer-safe bag for up to 3 months.
The cookie dough can be made ahead and refrigerated for up to 3 days. When ready to bake, let the dough sit at room temperature for 10-15 minutes to soften slightly, then scoop and bake as directed.
You can also freeze the dough balls for up to 3 months; bake frozen dough directly, adding 2-3 minutes to the baking time.
Serving ideas
Serve these cookies warm for the best experience, when the white chocolate is still melty and the centers are soft. They are wonderful with a glass of cold milk or a cup of hot tea. For a dessert platter, arrange them on a serving board with fresh berries and a dusting of powdered sugar.
These cookies also make great gifts. Pack them in a decorative tin or box, layering with parchment paper to prevent sticking.
They travel well and are sure to be a hit at parties, potlucks, or holiday gatherings. The bright lemon and coconut flavors are especially welcome in spring and summer.

Golden Coconut Lemon White Chocolate Cookies

Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp grape molasses
- 2 lemons zest of fresh lemons
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup shredded coconut, unsweetened
- 1 cup white chocolate chips
Instructions
- In a large bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl as needed.
- Beat in the eggs one at a time, mixing well after each addition. Add the grape molasses and lemon zest, and beat until fully combined, about 1 minute.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Fold in the shredded coconut and white chocolate chips with a spatula.
- Using a cookie scoop or tablespoon, scoop generous balls of dough (about 2 tablespoons each) onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake in a preheated oven at 350°F (175°C) for 16 minutes, or until the edges are golden amber and the centers are set but still soft. The centers will continue to set as they cool.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
