Before you start

Before starting, pat the chicken tenderloins dry with paper towels. Slice the onions thinly and evenly so they cook at the same rate. Measure out the shredded cheese and cut the butter into small pieces.

Have the slow cooker ready and make sure it is clean and dry. If serving with rice, start the rice cooker or pot of rice about 30 minutes before the chicken is done so everything is ready at the same time.

Ingredients at a glance (6)
  • 1 1/2 lb chicken breast tenderloins
  • 2 medium Vidalia onions, thinly sliced
  • 1 can (10.5 oz) condensed French onion soup
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp butter
  • Steamed jasmine rice, for serving

Instructions

Layer and Set

  1. Layer the Chicken and Onions
Place the chicken breast tenderloins in a single layer in the bottom of the slow cooker. Scatter the sliced Vidalia onions evenly over the chicken, covering the meat completely.
Look for The chicken should be fully covered by the onion slices.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip For even cooking, arrange the tenderloins so they are not overlapping too much.
  2. Add the Soup
Pour the condensed French onion soup over the onions and chicken. Use a spoon to gently spread the soup so it coats the top evenly.
Look for The soup should form a thin, even layer over the onions.
Tip Do not stir; the layers will meld as it cooks.

At the end of this phase, the slow cooker contains a neat layer of raw chicken, topped with sliced onions and a blanket of condensed soup. The ingredients are not stirred, and the cheese and butter sit on top, waiting to melt.

The kitchen smells faintly of onion and beef broth. Everything looks tidy and promising, with the cheese still in shreds and the butter in distinct pieces.

Slow-Cook to Tender

  1. Top with Cheese and Butter
Sprinkle the shredded sharp cheddar cheese evenly over the soup layer. Dot the top with the butter pieces.
Look for The cheese should cover the surface completely.
Tip Cut the butter into small pieces so it melts quickly and evenly.
  2. Cover and Cook Low
Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). Do not lift the lid during the first 3 hours.
Look for The sauce will be bubbling gently around the edges.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist the urge to peek; each time the lid is lifted, heat escapes and cooking time increases.

After several hours on low, the slow cooker is bubbling gently around the edges. The cheese has melted into a golden layer, and the onions have softened and released their juices.

The aroma is rich and savory, with sweet onion notes. The chicken is cooked through and tender; a fork inserted into a tenderloin meets little resistance. The sauce is still loose but beginning to thicken.

Finish and Serve

  1. Stir and Finish
After 4 hours, gently stir the mixture to combine the melted cheese, onions, and sauce into a creamy coating. The chicken should shred easily with a fork.
Look for The sauce should be smooth and the chicken should pull apart easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce seems thin, let it cook uncovered for 10–15 minutes to thicken.
  2. Serve Over Rice
Spoon the chicken and sauce over steamed jasmine rice on serving plates. Serve hot.
Look for The chicken should be glistening with the golden cheddar sauce.
Tip Use a slotted spoon to serve if you prefer less sauce on the rice.

After stirring, the sauce is smooth and creamy, coating the chicken and onions evenly. The chicken shreds easily and is glistening with cheese. The onions have become golden ribbons, and the overall dish looks like a hearty, comforting stew. When served over rice, the sauce pools around the grains, and the steam carries the scent of melted cheddar and caramelized onion.

Common mistakes

A common mistake is lifting the lid to check on the chicken too often, which lets heat escape and extends cooking time. Another is using pre-shredded cheese, which often contains anti-caking agents that prevent smooth melting.

Also, do not over-salt the dish; the condensed soup is already salty. Finally, make sure the chicken is fully submerged under the onions and soup so it cooks evenly and stays moist.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce should be thick enough to coat the back of a spoon, and the onions should be completely soft and translucent. If the sauce is too thin, remove the lid and cook on high for 10–15 minutes to reduce. The cheese should be fully melted and smooth, not clumpy or stringy.

  • Poultry: 165°F (74°C) in the thickest part
