Before you start

Before starting, set a large pot of water to boil. Have a bowl of ice water ready for shocking the cabbage. Remove the core from the cabbage and carefully peel off whole leaves, trying to keep them intact.

Rinse the rice under cold water until the water runs clear. Finely dice the onion and mince the garlic. Chop the parsley. Measure out all the spices and pastes so they are ready to mix. Preheat the oven to 350°F (175°C) when you begin shaping the bundles.

Ingredients at a glance (13)
  • 1 large head white cabbage
  • 1 tbsp salt
  • 400 g ground beef
  • 1 cup Baldo rice, rinsed
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tbsp pepper paste
  • 1/4 cup olive oil
  • 1 tsp dried mint
  • 1 tsp ground cumin
  • 1/4 cup fresh parsley, chopped
  • 1 1/2 cups hot tomato paste water broth

Instructions

Blanch and Mix

  1. Blanch the Cabbage Leaves
Bring a large pot of water to a boil and add the salt. Carefully remove the whole leaves from the cabbage head, keeping them intact. Blanch the leaves in the boiling water for 3 minutes until tender and pliable. Using tongs, transfer the leaves to a bowl of ice water to stop the cooking. Drain and pat dry.
Look for Leaves are bright green, soft, and bend without cracking.
Tip If the central rib is thick, shave it down with a knife for easier rolling.
  2. Prepare the Filling
In a large mixing bowl, combine the ground beef, rinsed rice, diced onion, minced garlic, tomato paste, pepper paste, olive oil, dried mint, ground cumin, salt, and chopped parsley. Knead the mixture with your hands until everything is evenly distributed and the mixture holds together.
Look for The filling is fragrant, well combined, and slightly sticky.
Tip Wet your hands lightly to prevent the mixture from sticking.

The cabbage leaves are bright green, soft, and flexible. The filling is fragrant with herbs and spices, and the rice is evenly distributed. The mixture holds together when pressed. The kitchen smells of garlic, mint, and cumin. Everything is ready for shaping.

Shape and Bake

  1. Shape the Bundles
Line a small glass bowl with a softened cabbage leaf, letting the edges overhang. Place a generous mound of the beef-rice mixture in the center. Fold the cabbage edges over the filling, pressing gently to form a neat round bundle. Invert the bundle into a round baking dish. Repeat with the remaining leaves and filling to make 8 bundles total.
Look for Each bundle is tight and round, with no filling exposed.
Tip If a leaf tears, use two smaller leaves overlapping to wrap the filling.
  2. Add the Broth and Cover
Pour the hot tomato paste water broth over the cabbage bundles in the baking dish. The liquid should come about halfway up the sides of the bundles. Cover the dish with a sheet of wet parchment paper, tucking it around the bundles to keep them moist during baking.
Look for The broth is light red and surrounds the bundles evenly.
Tip Wet the parchment under the tap and shake off excess before covering.
  3. Bake Until Tender
Preheat the oven to 350°F (175°C). Bake the covered cabbage bundles for 50 to 60 minutes, until the cabbage is very tender and the filling is cooked through. Remove the parchment during the last 10 minutes to let the tops caramelize slightly. The internal temperature of the filling should reach 160°F (71°C).
Look for The tops are golden and the broth is bubbling around the edges.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If the dish looks dry, add a splash of hot water or broth.

The bundles are neat and tightly wrapped, sitting snugly in the baking dish. The tomato broth is light red and surrounds the bundles. As they bake, the aroma becomes rich and savory. The tops turn golden, and the broth bubbles gently. The filling reaches 160°F (71°C).

Rest and Serve

  1. Rest and Serve
Remove the baking dish from the oven and let the cabbage bundles rest for 5 minutes before serving. Use a spatula to lift each bundle onto a plate, spooning some of the tomato broth over the top. Cut one open to reveal the juicy, aromatic filling.
Look for The bundles hold their shape and the filling is steaming.
Tip Serve with a side of yogurt or a simple green salad.

The bundles have rested and are firm enough to lift without falling apart. The broth is glossy, and the cabbage is deeply caramelized. Cutting one open reveals a juicy, steaming filling with visible grains of rice and herbs. The first bite is tender, aromatic, and satisfying.

Common mistakes

A common mistake is under-blanching the cabbage, which makes the leaves brittle and prone to tearing. Make sure the leaves are fully submerged and cook for the full 3 minutes.

Another issue is overfilling the bundles — use a generous but manageable mound so the cabbage can close around it.

If the dish dries out during baking, add a splash of hot water or broth. Finally, don’t skip the wet parchment cover; it keeps the bundles moist and prevents the tops from browning too quickly.

How to tell it’s done

The cabbage bundles are done when the cabbage is very tender and can be pierced easily with a fork, and the filling is cooked through. An instant-read thermometer inserted into the center of a bundle should read at least 160°F (71°C).

The tops should be golden and slightly caramelized, and the broth should be bubbling and reduced slightly. Let the dish rest for 5 minutes before serving to allow the bundles to set.

  • Ground meat: 160°F (71°C) in the thickest part
