Tips for success
To achieve the most consistent results, use a digital thermometer to monitor the oil temperature throughout the frying process. If the temperature dips below 350°F, the potatoes will absorb oil; if it exceeds 400°F, the exterior will burn before the interior is cooked. Adjust the heat source incrementally to keep the oil in the ideal 375°F range for the duration of the frying.
When serving, consider adding a sprinkle of fresh parsley or extra pimentón for a pop of color and freshness. The contrast of the green herbs against the fiery red sauce and white aioli makes for an impressive presentation.
Ensure the potatoes are served on a warmed platter if possible, as this helps keep the dish at the perfect temperature for longer, allowing guests to enjoy the texture.
Variations
- Spicy Bravas: Increase the heat by adding a teaspoon of cayenne pepper or a finely minced fresh chili to the bravas sauce while it simmers to give the dish an extra kick.
- Herbed Aioli: Stir a tablespoon of finely chopped fresh parsley, chives, or cilantro into the garlic aioli before serving to add a bright, fresh dimension to the creamy sauce.
Storage and make-ahead
- Fridge
- Store leftover potatoes in a sealed container for up to 2 days; keep sauces in separate airtight jars for up to 5 days.
- Reheat
- Reheat the potatoes in a 400°F oven or an air fryer for 5-8 minutes until the crust becomes crispy again; do not microwave as they will turn soft.
Store any leftover potatoes in an airtight container in the refrigerator for up to two days. However, be aware that the texture will inevitably lose its crispness over time.
It is highly recommended to consume the potatoes immediately after preparation for the best quality. The sauces can be stored separately in the refrigerator for up to five days, provided they are kept in sealed glass jars.
The pimentón bravas sauce and the garlic aioli can be prepared up to three days in advance and kept in the refrigerator. You can also cube and par-boil the potatoes a few hours before serving; store them in a single layer on a tray in the refrigerator until ready to fry. This method saves time during the final preparation, allowing you to focus on the frying and assembly.
Serving ideas
Patatas bravas are best served as a warm appetizer or snack, ideally alongside other tapas like olives, cured meats, or crusty bread.
The dish is meant to be shared, so provide small plates and skewers or toothpicks for guests to easily pick up the cubes. Because of the bold, smoky, and garlicky flavors, it pairs exceptionally well with dry white wines or crisp, cold beverages.
The presentation is key to the tapas experience. Arrange the potatoes in a shallow bowl or on a rustic slate board to mimic the authentic environment of a Spanish bar.
Ensure there is plenty of sauce drizzled over the top, but avoid saturating the potatoes too far in advance, as the moisture will eventually soften the crisp exterior. A final garnish of smoked paprika adds a beautiful visual touch.

Glass-Crispy Spanish Patatas Bravas with Smoky Sauce

Ingredients
- 500 g Yukon Gold potatoes, peeled and cubed
- 1/2 tsp baking soda
- 2 cups olive oil, for frying
- 1/2 cup smoked pimentón bravas sauce, made ahead
- 1/4 cup garlic aioli, made ahead
Instructions
- Place the cubed Yukon Gold potatoes into a large pot of water seasoned with baking soda. Bring the water to a boil and cook the potatoes for 8 minutes until tender but not falling apart. Drain the potatoes thoroughly and shake the colander vigorously to roughen the edges, which ensures a crispier crust during frying.
- Heat the olive oil in a deep-fryer or heavy-bottomed pot to 375°F (190°C). Carefully lower the par-boiled potato cubes into the hot oil in small batches to avoid crowding. Fry for approximately 7 minutes, turning occasionally, until the potatoes are encased in a thick, blistered golden crust while remaining fluffy on the inside.
- Transfer the fried potatoes to a wire rack to drain briefly. Arrange on a platter. Drizzle with the bravas sauce and the garlic aioli. To cook the eggs in the aioli through, they must reach 160°F (71°C). Serve immediately while the potatoes are still piping hot and maintaining their signature glass-like crunch.
