Tips for success
For the ultimate molten white chocolate experience, serve the muffins within 30 minutes of baking. If you have leftovers, you can reheat them in the microwave for 10–15 seconds to restore the gooey texture.
To prevent the strawberries from sinking to the bottom, toss the chopped berries in a tablespoon of flour before folding them into the batter. This helps them stay suspended throughout the muffin. Also, use a cookie scoop to portion the batter evenly; this ensures uniform muffins that bake at the same rate.
If you prefer a more intense strawberry flavor, you can roast the strawberries before adding them to the batter. Toss them with a little sugar and roast at 375°F (190°C) for 10 minutes, then let cool completely. This concentrates their sweetness and adds a deeper flavor.
However, this step is optional and adds extra time. For a crunchy top, sprinkle a little coarse sugar over the batter before baking. This creates a delicate, crackly crust that contrasts with the soft interior. Feel free to experiment with other berries, such as raspberries or blueberries.
Variations
- Blueberry Lemon: Replace the strawberries with 1 1/2 cups fresh blueberries and add 1 tablespoon of lemon zest to the batter. Omit the white chocolate or use dark chocolate chips for a tangy-sweet twist.
- Raspberry Dark Chocolate: Swap the white chocolate for dark chocolate chunks and use 1 1/2 cups fresh raspberries. The tartness of raspberries pairs beautifully with the bitterness of dark chocolate.
- Triple Berry: Use a mix of strawberries, blueberries, and raspberries, about 1/2 cup each. Keep the white chocolate for a creamy contrast, or use a mix of white and milk chocolate.
- Almond Strawberry: Add 1/2 teaspoon of almond extract to the wet ingredients and sprinkle 1/4 cup sliced almonds on top of the muffins before baking. The nutty flavor complements the strawberries and white chocolate.
Storage and make-ahead
- Fridge
- Refrigerate in an airtight container for up to 5 days. Reheat in the microwave for 10–15 seconds to soften.
- Freezer
- Wrap each muffin in plastic wrap and place in a freezer bag. Freeze for up to 3 months. Thaw at room temperature or reheat in the microwave.
- Reheat
- Microwave for 10–15 seconds or warm in a 350°F (175°C) oven for 5-8 minutes until warmed through.
Store leftover muffins in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 5 days. To maintain freshness, place a paper towel in the container to absorb excess moisture. If the muffins are not fully cool when stored, condensation can make them soggy, so always cool completely before storing.
The muffin batter can be made ahead and stored in the refrigerator for up to 2 days. Cover the bowl tightly and keep it chilled. When ready to bake, scoop the cold batter into the prepared tins and bake as directed, adding an extra 2–3 minutes to the final baking time if needed. Baked muffins can also be frozen for up to 3 months; wrap individually in plastic wrap and place in a freezer-safe bag. Thaw at room temperature or reheat in the microwave.
Serving ideas
Serve these muffins warm, straight from the oven, when the white chocolate is molten and the strawberries are soft and jammy. They are wonderful on their own, but a pat of butter or a drizzle of honey can be a delicious addition.
For a more indulgent treat, split a muffin and toast it lightly, then add a scoop of vanilla ice cream. The contrast of warm muffin and cold ice cream is irresistible. These muffins are also perfect for brunch spreads, alongside fresh fruit, yogurt, and coffee.
For a coffee shop experience, serve the muffins with a latte or cappuccino. The sweetness of the white chocolate pairs beautifully with the bitterness of coffee. If you are serving a crowd, arrange the muffins on a platter with fresh strawberries and mint leaves for a pretty presentation.
They are best enjoyed within a few hours of baking, but they also make a delightful next-day breakfast—just reheat them briefly to revive the texture. These muffins are sure to become a favorite.

Giant White Chocolate Strawberry Bakery Muffins

Ingredients
- 1/2 cup unsalted butter, melted
- 2 tbsp vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup sour cream
- 1 tbsp vanilla bean paste
- 2 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups fresh strawberries, hulled and chopped
- 1 cup white chocolate chunks or chips
Instructions
- Heat the oven to 425°F (220°C). Line 6 jumbo muffin cups with paper liners, or use 12 standard cups for smaller muffins. In a large bowl, whisk the melted butter, oil, and sugar for 2 minutes until well combined and slightly thickened. Beat in the eggs one at a time, whisking until the mixture is pale and creamy. Add the buttermilk, sour cream, and vanilla bean paste, and whisk until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet mixture and fold with a rubber spatula until just a few streaks of flour remain. Gently fold in the chopped strawberries and white chocolate chunks until evenly distributed. Do not overmix.
- Divide the batter evenly among the prepared muffin cups, filling each almost to the top. Place the muffin tin in the oven and bake at 425°F (220°C) for exactly 5 minutes. Without opening the oven door, reduce the oven temperature to 375°F (190°C) and continue baking for 15 minutes, or until the muffins are tall, golden brown, and a toothpick inserted in the center comes out with a few moist crumbs.
- Remove the muffin tin from the oven and let the muffins cool in the pan for 5 minutes. Then transfer them to a wire rack. Serve warm so the white chocolate is molten and the strawberries are juicy. If storing, let cool completely before storing in an airtight container.
