Before you start
Before starting, ensure the chocolate hazelnut spread is frozen into 8 discs. To do this, line a small plate with parchment paper, spoon the spread into 8 equal mounds, and freeze for at least 2 hours. Also, measure all ingredients and set them out.
The butter and eggs should be cold, straight from the refrigerator. Line two baking sheets with parchment paper. Preheat the oven to 390°F (199°C) when you are ready to bake. Have the Kinder Bueno bars broken into pieces and ready to press on top.
Ingredients at a glance (10)
- 1 cup cold European butter, cubed
- 1 cup dark brown sugar, packed
- 1/2 cup caster sugar
- 2 large cold eggs
- 2 tsp vanilla bean paste
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 cup chocolate hazelnut spread (such as Nutella), frozen into 8 discs
- 8 pieces Kinder Bueno bars, each broken into pieces
Instructions
Mix the Dough
- Make the DoughIn a large bowl, beat the cold butter with the dark brown sugar and caster sugar until just combined and dense, about 2 minutes. Add the cold eggs one at a time, beating well after each, then beat in the vanilla bean paste until smooth and thick. Scrape down the sides of the bowl.Look for The mixture will look creamy but not fluffy; it should hold its shape when lifted.Tip Keep the butter and eggs cold to prevent the dough from spreading too much during baking.
- Add Dry IngredientsWhisk the flour, baking soda, and salt in a separate bowl. Gradually add the dry mixture to the butter mixture, mixing on low speed until just combined. Do not overmix; the dough will be thick and slightly sticky.Look for The dough comes together into a cohesive mass with no dry streaks.Tip Use a spatula to fold in the last bits of flour to avoid overworking the dough.
- Chill the DoughCover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes. This step is essential for easier handling and to prevent excessive spreading.Look for The dough is firm enough to scoop and shape without sticking to your hands.Tip Chilling for up to 24 hours enhances flavor and texture.
After mixing, the dough should be thick, dense, and slightly sticky. It will not be fluffy like a cake batter. The butter and sugars should be well combined, but the mixture will still have small bits of butter visible—this is fine. The dough should smell buttery and sweet, with a hint of vanilla. It should be firm enough to scoop and shape after chilling. The texture should be cohesive, not crumbly, and it should hold together when pressed.
Fill and Shape
- Portion the DoughScoop the chilled dough into 8 equal portions, about 3 ounces each. Roll each portion into a ball, then flatten into a disc about 3 inches wide.Look for Each disc is uniform in size and thickness.Tip Use a kitchen scale for accuracy if you have one.
- Fill with Hazelnut CreamPlace one frozen disc of chocolate hazelnut spread in the center of each dough disc. Carefully fold the dough over the filling and seal the edges, forming a ball. Make sure the filling is completely enclosed.Look for The dough fully covers the frozen spread with no cracks.Tip If the dough cracks, patch it with a small piece of extra dough.
- Shape and ChillPlace the filled dough balls on a parchment-lined baking sheet. Gently flatten each to about 1 inch thick. Refrigerate the shaped cookies for 15 minutes while the oven heats.Look for The cookies are cold and firm to the touch.Tip Chilling again helps the cookies hold their shape during baking.
The filled dough balls should be smooth and round, with no cracks or exposed filling. When you press the dough around the frozen hazelnut disc, it should feel cold and firm. The dough should not stick to your hands; if it does, chill it for a few more minutes. The shaped cookies should be uniform in size and about 1 inch thick. They should be cold and firm when you place them in the oven, which helps them hold their shape during baking.
Bake and Finish
- Bake the CookiesHeat the oven to 390°F (199°C). Bake the chilled cookies for 11 minutes, or until the edges are golden and caramelized. The centers will look slightly soft but will set as they cool.Look for The edges are deep golden brown and the tops are cracked in places.Safe temperature 160°F (71°C) internal temperature (egg dishes)Tip Bake one cookie as a test if unsure about your oven's accuracy.
- Press on Bueno PiecesImmediately after removing from the oven, press a piece of Kinder Bueno into the top of each cookie. The heat will soften the chocolate.Look for The chocolate begins to melt slightly around the edges.Tip Do this right away so the chocolate adheres to the warm surface.
- Cool and ServeLet the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Serve warm for the best molten center.Look for The cookies are set but still soft in the center.Tip For an extra gooey center, microwave for 10 seconds before serving.
As the cookies bake, the edges will start to caramelize and turn golden brown, while the centers remain pale and slightly puffed. The kitchen will fill with the aroma of butter, sugar, and hazelnut. After 11 minutes, the edges should be deeply golden, and the tops may have a few cracks.
When you press a cookie gently, the center will feel soft but not raw. The Kinder Bueno pieces should be pressed on immediately after baking, and they will soften slightly, creating a glossy finish.
Common mistakes
One common mistake is overmixing the dough, which can make the cookies tough. Mix until the flour is just incorporated, then stop. Another pitfall is not chilling the dough thoroughly; if the dough is too warm, the cookies will spread too much and lose their thick, bakery-style shape.
Also, be careful not to overbake—the cookies should be slightly underdone in the center when you remove them from the oven. If the hazelnut cream leaks out during baking, the dough was not sealed properly; make sure to pinch the seams well. Finally, pressing the Kinder Bueno on too early may cause it to melt completely; wait until the cookies are out of the oven, then press gently.
How to tell it’s done
The cookies are done when the edges are deep golden brown and caramelized, and the tops look set but still slightly soft in the center. The internal temperature of the cookies should reach at least 160°F (71°C) to ensure the eggs are fully cooked.
To check, insert an instant-read thermometer into the thickest part of a cookie; it should read 160°F (71°C). The centers will continue to set as they cool, so do not overbake. The cookies should feel firm on the edges but give slightly when pressed in the middle. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
