Tips for success
For the most tender ribs, cook on LOW rather than HIGH. The low heat allows the collagen to break down more slowly, resulting in a silkier texture.
If you’re short on time, HIGH can work, but the meat won’t be quite as succulent. Also, consider making the dish a day ahead—the flavors deepen overnight, and the fat can be skimmed off the surface before reheating.
If you prefer a thicker glaze, after removing the ribs, transfer the sauce to a saucepan and simmer over medium heat until reduced by a third. You can also whisk in a slurry of cornstarch and water to thicken it quickly.
For a touch of brightness, stir in a tablespoon of apple cider vinegar just before serving. The acidity balances the sweetness of the peaches and barbecue sauce.
Variations
- Spicy Peach Ribs: Add 1-2 minced chipotle peppers in adobo sauce to the barbecue sauce before pouring over the ribs. The smoky heat pairs beautifully with the sweet peaches and bourbon. For extra heat, sprinkle in a pinch of cayenne pepper along with the chipotles.
- Bourbon-Brown Sugar Glaze: After cooking, remove the ribs and keep warm. Pour the sauce into a saucepan, add 2 tablespoons brown sugar and 1 tablespoon bourbon, and simmer until thickened. Brush over the ribs and broil for 2-3 minutes for a sticky, caramelized finish.
- Apple-Peach Short Ribs: Replace half of the peaches with sliced apples, such as Honeycrisp or Fuji. The apples add a tart note that complements the sweet peaches and smoky barbecue. Use apple cider instead of bourbon for a non-alcoholic version.
- Smoky Chipotle-Peach Ribs: Stir 1 tablespoon smoked paprika and 1 teaspoon ground cumin into the barbecue sauce. The smoky spices deepen the flavor, making it even more robust. Add a splash of apple cider vinegar at the end to brighten the sauce.
Storage and make-ahead
- Fridge
- Store leftover ribs in an airtight container in the refrigerator for up to 4 days.
- Freezer
- The cooked ribs freeze well for up to 3 months. Cool completely, then transfer to a freezer-safe container or bag.
- Reheat
- Reheat frozen or thawed ribs in a 350°F (175°C) oven for 20-30 minutes, or until heated through.
Leftover ribs can be stored in an airtight container in the refrigerator for up to 4 days. The sauce will solidify when chilled; reheat gently on the stovetop or in the microwave, adding a splash of water or beef broth to loosen it if needed. The flavors continue to meld, making leftovers even more delicious.
The entire dish can be assembled in the slow cooker insert the night before, covered, and refrigerated. In the morning, place the insert in the slow cooker and cook as directed. This is a great make-ahead meal for busy days. The cooked ribs also freeze well—see the freezer notes below.
Serving ideas
Serve these ribs over creamy mashed potatoes, buttered egg noodles, or soft polenta to soak up the luscious sauce. A side of collard greens or a simple green salad adds freshness.
For a true Southern meal, add a slice of cornbread and a glass of sweet tea. The peaches are a delicious surprise—be sure to spoon them over the meat.
For a more casual presentation, shred the meat and pile it onto toasted buns for an incredible pulled-beef sandwich. Top with a little extra sauce and some pickled onions or coleslaw.
The dish is also great with rice or roasted vegetables. Any way you serve it, the combination of sweet peaches, smoky barbecue, and tender beef is sure to impress.

Georgia Peach Honey Hickory Beef Short Ribs

Ingredients
- 5 lb bone-in beef short ribs, English-cut
- 3 cups sliced ripe peaches (about 4 peaches)
- 1/4 cup Kentucky bourbon
- 1 1/2 cups honey hickory barbecue sauce
Instructions
- Place the beef short ribs in the slow cooker insert in a single layer, overlapping as needed. Scatter the sliced peaches evenly over the ribs. Pour the bourbon over the peaches and ribs.
- Pour the honey hickory barbecue sauce over the entire surface of the ribs and peaches, using a spoon to spread it evenly so every piece is coated.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours. The ribs are done when the meat is fork-tender and easily pulls away from the bone. If using a meat thermometer, the internal temperature should reach at least 145°F (63°C); for best tenderness, cook until the meat reaches 200°F (93°C). Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute and the meat to become even more tender.
- Using a carving fork, carefully lift the ribs out of the slow cooker and place them on a serving platter or individual plates. Spoon some of the peaches and sauce over the top. Serve hot.
