Before you start

Before you start, make sure the chicken drumsticks are thawed if they were frozen. Peel the garlic cloves and slice the scallions. Measure the honey and soy sauce into a small bowl or measuring cup.

Have your slow cooker ready — a 6- to 7-quart oval works best for arranging the drumsticks in a single layer. If you plan to thicken the sauce on the stovetop, have a small saucepan on hand.

Ingredients at a glance (6)
  • 8 chicken drumsticks
  • 12 peeled whole garlic cloves
  • 4 scallions, sliced
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • steamed basmati rice, for serving

Instructions

Prep and Load

  1. Arrange the Chicken
Place the chicken drumsticks in the slow cooker insert, arranging them in a single layer, slightly overlapping if needed. Scatter the garlic cloves and sliced scallions over the chicken, tucking some garlic between the drumsticks.
Look for The drumsticks should be nestled snugly; garlic and scallions distributed evenly.
Tip No need to brown the chicken first — the slow cooker does the work.
  2. Add the Sauce
In a small bowl or glass measuring cup, stir together the honey and soy sauce until combined. Pour the mixture evenly over the chicken and aromatics. Do not stir; let the sauce settle around the meat.
Look for The sauce should coat the drumsticks and pool slightly at the bottom.
Tip If the honey is thick, warm it for a few seconds to make pouring easier.

You should see raw drumsticks nestled in the slow cooker, with garlic cloves and scallions scattered over them. The honey-soy sauce pours over and pools around the chicken.

The raw ingredients look vibrant and glossy. Before moving on, make sure the chicken is in a single layer as much as possible and that the sauce covers the bottom of the insert.

Slow-Cook and Glaze

  1. Slow-Cook the Chicken
Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and cooked through. The meat should pull easily from the bone. Do not lift the lid during the first 2 hours.
Look for The sauce will be bubbling gently and the kitchen will smell sweet and savory.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Low and slow gives the most tender results; high works in a pinch.
  2. Check the Temperature
Use an instant-read thermometer to check the thickest part of a drumstick, avoiding the bone. The chicken is safe to eat when it reaches 165°F (74°C). If not done, return the lid and cook for another 30 minutes.
Look for The thermometer should read 165°F (74°C) or higher.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chicken is not quite there, give it more time — the sauce will only get better.
  3. Thicken the Glaze (Optional)
If the sauce is thinner than you like, transfer the chicken to a plate and keep warm. Pour the sauce into a small saucepan and simmer over medium heat for 5 to 8 minutes, until reduced and glossy. Return the chicken to the pot and toss to coat.
Look for The sauce should coat the back of a spoon and cling to the chicken.
Tip This step is optional but gives a thicker, stickier glaze.

After several hours, the kitchen smells sweet and savory. The sauce is bubbling gently around the edges, and the chicken skin has darkened to a deep amber. The garlic cloves are soft and golden. The chicken should be fork-tender, and the sauce should coat a spoon. Check the internal temperature — it must be at least 165°F (74°C).

Serve and Enjoy

  1. Serve the Chicken
Spoon steamed basmati rice onto plates. Top with the glazed drumsticks, garlic cloves, and a drizzle of the sauce from the slow cooker. Garnish with extra sliced scallions if desired.
Look for The chicken should be glistening, the garlic soft and golden.
Tip The confit garlic is a treat — don't skip it.

The chicken is plated over steamed rice, with garlic cloves and scallions spooned on top. The glaze is sticky and glossy, dripping down the sides of the drumsticks. The rice is fluffy and ready to soak up the sauce. The dish looks rustic and inviting, with a beautiful lacquered sheen on the chicken.

Common mistakes

One common mistake is lifting the lid too often, which lets out heat and extends the cooking time. Another is using frozen chicken without thawing, which can lead to uneven cooking. Adding too much liquid is unnecessary — the chicken releases its own juices.

Also, resist the urge to stir the pot; the chicken will break apart if you do. Finally, don't skip checking the temperature, especially if you're using a different size of drumstick.

How to tell it’s done

The chicken is done when it is fork-tender and the internal temperature in the thickest part of a drumstick, away from the bone, reaches 165°F (74°C). The meat should pull easily from the bone with no resistance.

The sauce should be bubbling and slightly thickened; if it looks thin, that's fine — it will thicken as it rests or you can reduce it on the stovetop. Let the chicken rest for a few minutes before serving.

  • Poultry: 165°F (74°C) in the thickest part
