Before you start

Before beginning the cooking process, preheat the oven to 400°F (204°C) to ensure a hot roasting environment. Wash the baby potatoes thoroughly, pat them completely dry with a clean towel, and slice them in half. Trim the ends of the green beans.

Mince the garlic cloves finely and chop the fresh herbs. Pat the chicken breasts dry with paper towels to help the garlic and herbs adhere to the surface. Gather the measuring spoons, a large mixing bowl, and a 9x13-inch glass baking dish.

Ingredients at a glance (5)
  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 12 oz green beans, trimmed
  • 4 cloves garlic, minced
  • 2 tbsp chopped mixed herbs

Instructions

Ingredient Preparation and Seasoning

  1. Prep and Season Potatoes
Preheat the oven to 400°F (204°C). In a large bowl, toss the halved baby potatoes with half of the minced garlic and half of the chopped mixed herbs.
Look for The potatoes should be evenly coated with herbs and garlic.
Tip Drying the potatoes thoroughly before tossing helps the seasonings stick.
  2. Season Chicken and Green Beans
Season the chicken breasts and green beans. Rub the chicken breasts with the remaining garlic and mixed herbs. Toss the trimmed green beans with any remaining garlic and herbs in the bowl.
Look for The chicken should have a thick herb coating.
Tip Ensure the garlic is evenly distributed so it does not burn in one spot.

All ingredients should be prepared, chopped, and thoroughly coated in the fragrant herb and garlic mixture.

The chicken breasts should have a visible herb crust on all sides, and the potatoes should be glistening with seasonings. The oven must be fully preheated to the correct temperature before the potatoes are placed inside.

Staggered Roasting Process

  1. Roast the Potatoes First
Arrange the seasoned baby potatoes cut-side down in a single layer in a 9x13-inch glass baking dish. Place the dish in the preheated oven and roast for 15 minutes.
Look for The potatoes should start to sizzle and show light golden edges.
Tip Roasting cut-side down ensures maximum crispiness.
  2. Add Chicken and Green Beans
Carefully remove the baking dish from the oven. Push the potatoes to the sides of the dish to make room in the center. Place the seasoned chicken breasts in the center, and scatter the green beans around them.
Look for The chicken and vegetables should fit comfortably in a single layer.
Tip Keep the green beans slightly separated so they roast rather than steam.

The baby potatoes should be partially roasted, showing the first signs of golden browning and starting to soften. The chicken breasts and green beans are added to the dish, and the entire pan should sizzle gently. The chicken breasts will begin to opaque on the outside while the green beans remain bright green.

Finishing, Resting, and Slicing

  1. Roast and Rest the Chicken
Return the baking dish to the oven and roast for an additional 20 to 25 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove from the oven and let the chicken rest in the dish for 5 minutes.
Look for The chicken thermometer must register 165°F (74°C).
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resting allows the juices to redistribute throughout the chicken meat.
  2. Slice and Baste with Drippings
Transfer the rested chicken breasts to a cutting board and slice them smoothly. Arrange the sliced chicken back in the baking dish alongside the golden potatoes and green beans. Spoon the hot pan drippings generously over the chicken and vegetables before serving.
Look for The chicken slices should look moist and glistening with juices.
Tip Use a very sharp knife for clean, smooth slices.

The chicken must reach a safe internal temperature, and the potatoes should be fully tender and golden. After resting, the sliced chicken should look incredibly juicy and tender. The rich, golden pan drippings at the bottom of the dish should be hot and ready to spoon over the plated portions.

Common mistakes

One common error is overcrowding the baking dish, which traps steam and prevents the potatoes and chicken from browning. Use a large enough dish so the ingredients can spread out. Another mistake is adding the green beans too early, which results in overcooked, greyish vegetables.

Always add them during the final stage of roasting. Finally, slicing the chicken immediately after cooking will cause all the juices to run out; always allow it to rest before cutting.

How to tell it’s done

The chicken is perfectly cooked when it is opaque throughout and a meat thermometer inserted into the thickest part reads exactly 165°F (74°C). The baby potatoes should be easily pierced with a fork, with a golden-brown, crispy exterior.

The green beans should be tender yet still retain a slight bite and a vibrant green color. Ensure the pan drippings are bubbling and fragrant before removing the dish from the oven.

  • Poultry: 165°F (74°C) in the thickest part
