Tips for success
For the absolute best results, always slice the roast beef against the grain. The grain refers to the direction that the muscle fibers run through the meat.
Slicing perpendicular to these fibers shortens them, making each bite incredibly tender and easy to chew. If you slice parallel to the grain, the meat will feel tough and stringy, regardless of how perfectly it was roasted.
Do not throw away any leftover pan drippings or caramelized onions. These juices are packed with concentrated garlic, rosemary, and beef flavors.
You can store them in a small container and spoon them over reheated slices, or use them as a rich base for a quick pan gravy or a savory spread on roast beef sandwiches the next day.
Variations
- Red Wine Pan Sauce: Deglaze the roasting pan with a splash of dry red wine after removing the beef, simmering until reduced for a rich, sophisticated sauce.
- Spicy Garlic Herb: Add a half teaspoon of crushed red pepper flakes to the herb butter mixture for a subtle, warming kick.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze sliced beef in a freezer-safe bag with pan juices for up to 3 months.
- Reheat
- Reheat gently in a baking dish covered with foil at 300°F (150°C) with a splash of broth.
Let the roast beef cool completely at room temperature for no more than two hours before storing.
Place any remaining sliced beef and caramelized onions into an airtight container, pouring the leftover pan juices over the top to keep the meat moist. Store the container in the refrigerator for up to three to four days.
While roast beef is best served fresh, you can prepare the garlic herb butter up to three days in advance and keep it covered in the refrigerator.
You can also slice the yellow onions ahead of time and store them in an airtight container. On the day of serving, simply soften the prepared herb butter, rub it onto the chilled beef roast, and proceed with roasting immediately.
Serving ideas
Present the sliced roast beef on a warm serving platter, surrounded by the sweet, deeply caramelized onions. Spoon the rich pan juices generously over the meat right before serving to give it a beautiful, glistening appearance and an extra burst of savory garlic-herb flavor at the table.
This roast beef pairs wonderfully with classic comfort food sides. Serve it alongside creamy mashed potatoes, roasted root vegetables, or crusty warm bread to soak up every drop of the delicious pan drippings. A crisp green salad or roasted green beans also provides a fresh, bright contrast to the rich meat.

Tender Garlic Herb Roast Beef with Sweet Caramelized Onions

Ingredients
- 3 lb beef roast, such as top round or eye of round
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 2 large yellow onions, sliced
Instructions
- Scatter the sliced yellow onions evenly across the bottom of a dark roasting pan. This creates a natural rack for the beef and prevents it from sticking to the bottom of the pan.
- In a small bowl, combine the softened unsalted butter, minced garlic, and chopped rosemary. Stir until a smooth paste forms. Rub the herb butter mixture generously over all sides of the beef roast, then place the beef directly on top of the onions.
- Place the roasting pan in an oven preheated to 325°F (163°C). Roast the beef uncovered, allowing the herb butter to melt and create a beautiful savory crust while the onions slowly caramelize underneath.
- During the final 30 minutes of roasting, carefully spoon the rich, savory pan drippings and melted herb butter from the bottom of the pan over the top of the beef roast and the surrounding caramelized onions.
- Insert a meat thermometer into the thickest part of the roast. Once the internal temperature reaches 145°F (63°C), remove the pan from the oven. Transfer the beef roast to a clean cutting board and let the meat rest for at least 15 minutes before slicing.
- Use a sharp carving knife to smoothly slice the succulent beef roast across the grain into thin slices. Arrange the slices on a platter and serve immediately with the caramelized onions and savory pan juices spooned over the top.
