Tips for success
For the most flavorful ribs, choose a barbecue sauce that you love, since it's the dominant flavor. A Kansas City-style sauce—thick, sweet, and smoky—works beautifully.
If you want a little heat, add a splash of hot sauce or a pinch of cayenne to the cooker. You can also swap the rosemary for thyme or oregano for a different herb profile.
To get a caramelized, sticky finish on the ribs, you can transfer them to a baking sheet and broil for 2 to 3 minutes after slow cooking. This step is optional but adds a nice char.
Watch closely to prevent burning. If you prefer a thicker sauce, pour the cooking liquid into a saucepan and simmer on the stovetop until reduced.
Variations
- Spicy Chipotle Ribs: Add 2 chipotle peppers in adobo sauce and 1 tablespoon of adobo sauce to the barbecue sauce before pouring over the ribs. The smoky heat pairs beautifully with the sweet sauce.
- Honey Mustard Ribs: Replace half of the barbecue sauce with honey mustard. This creates a tangier, sweeter glaze that's perfect for those who prefer a milder flavor.
- Apple Cider Ribs: Substitute 1/2 cup of apple cider for 1/2 cup of the barbecue sauce. The acidity of the cider balances the richness of the pork and adds a subtle fruity note.
- Smoky Bourbon Ribs: Stir 2 tablespoons of bourbon into the barbecue sauce before pouring over the ribs. The bourbon adds depth and a slight smokiness that complements the meat.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools. To reheat, place the ribs in a baking dish, cover with foil, and warm in a 350°F (175°C) oven for 15 to 20 minutes, or microwave in 30-second intervals until heated through.
You can assemble the ribs in the slow cooker insert the night before, cover, and refrigerate. The next morning, place the insert in the slow cooker base and cook as directed.
Add 30 minutes to the cooking time if starting from cold. The cooked ribs can also be made ahead and reheated gently before serving.
Serving ideas
Serve the ribs hot, straight from the slow cooker, with extra sauce spooned over the top. They pair well with classic sides like coleslaw, baked beans, cornbread, or potato salad.
For a lighter option, serve with a crisp green salad or grilled vegetables. The tender meat also makes excellent sandwiches—just pile it onto buns with a little extra sauce.
These ribs are perfect for casual gatherings and game-day spreads. Set out plenty of napkins and let guests pull the meat off the bone. If you have leftovers, shred the meat and use it in tacos, quesadillas, or on top of nachos. The smoky, sweet flavor works in many dishes.

Garlic Herb BBQ Baby Back Ribs: Slow Cooker

Ingredients
- 2 lb baby back pork ribs
- 10 cloves garlic, smashed
- 4 sprigs fresh rosemary
- 1 1/2 cups thick barbecue sauce
Instructions
- Place the baby back ribs side by side in the bottom of a 6-quart slow cooker. If needed, cut the racks to fit, but keep them as whole as possible. Arrange them meaty-side up for even cooking.
- Scatter the smashed garlic cloves and fresh rosemary sprigs evenly over the ribs. Tuck some garlic under the ribs if possible so the flavor permeates from all sides.
- Pour the barbecue sauce evenly over the ribs, using a spatula to spread it so every surface is coated. Make sure the sauce reaches the sides and edges of the meat.
- Cover the slow cooker and cook on low for 6 hours, or on high for 3 to 4 hours, until the meat is fork-tender and easily pulls away from the bone. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Test the ribs with a fork: the meat should be so tender that it nearly slips off the bone. If not done, continue cooking for another 30 minutes and check again. The internal temperature should read at least 145°F (63°C).
- Using a carving fork, carefully lift the ribs out of the slow cooker and transfer them to a serving plate. Spoon some of the sauce from the cooker over the top. Serve hot.
