Tips for success
For the best results, use Yukon Gold potatoes, which have a naturally buttery flavor and a creamy texture that is ideal for mashing. If you prefer a lighter texture, you can add a splash of warm milk or heavy cream while mashing the potatoes.
Ensure the butter is unsalted so you can control the final salt level of the dish, as parmesan cheese also adds a significant amount of saltiness to the potato base.
If you find the steak is browning too quickly on the outside but remains raw in the center, lower the heat slightly after the initial crust has formed. The goal is to cook the meat through while maintaining that crispy exterior.
If you have any leftover garlic butter in the pan, drizzle it over the plated steak and potatoes to ensure none of that intense, savory flavor goes to waste.
Variations
- Spicy Steak Bites: Add a pinch of red pepper flakes to the garlic butter while it melts to give the dish a subtle, warming heat that complements the richness of the steak and potatoes.
- Herb-Infused Mash: Fold in a tablespoon of finely chopped fresh chives or rosemary into the mashed potatoes during the final mashing stage to add an aromatic, garden-fresh flavor profile.
Storage and make-ahead
- Fridge
- Keep in an airtight container for up to 3 days. Ensure the food is refrigerated within 2 hours of cooking.
- Freezer
- Freezing is not recommended as the texture of the mashed potatoes and the quality of the seared steak will degrade significantly.
- Reheat
- Reheat the potatoes gently on the stovetop with a splash of milk. For the steak, reheat quickly in a pan over medium heat until just warm.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. When storing, try to keep the steak and the mashed potatoes in separate sections if possible, though they can be stored together.
Ensure the food has cooled to room temperature for no more than 2 hours before placing it in the refrigerator to maintain food safety and quality.
You can prepare the mashed potatoes ahead of time and keep them warm in a slow cooker on the lowest setting or reheat them gently on the stove with a splash of milk.
The steak, however, is best cooked fresh immediately before serving, as it can quickly become overcooked or tough if reheated. You can have the steak cubed ahead of time, kept in the refrigerator until you are ready to sear.
Serving ideas
Serve the dish immediately while everything is hot. Start by spooning a generous portion of the parmesan mashed potatoes onto the center of each plate, creating a slight well in the middle. Carefully place the seared garlic butter steak bites over the top, allowing the juices and garlic butter to soak into the potatoes.
This dish is hearty enough to be served on its own, but it pairs beautifully with a simple side of steamed green beans or a crisp garden salad to provide a fresh, crunchy contrast to the richness of the steak and the creaminess of the potatoes.

Garlic Butter Steak Bites with Parmesan Mashed Potatoes

Ingredients
- 1 1/2 lb sirloin steak, cut into 1-inch cubes
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 lb Yukon Gold potatoes, peeled and quartered
- 1/2 cup parmesan cheese, grated
Instructions
- Place the peeled and quartered potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer and cook until fork-tender, about 15 minutes. Drain the potatoes well and return them to the hot pot. Mash until smooth, then fold in the grated parmesan cheese until combined and creamy.
- Pat the steak cubes dry with paper towels. Heat a large skillet over medium-high heat. Add the steak cubes in a single layer, working in batches if necessary to avoid overcrowding the pan. Sear the steak until browned on all sides, reaching an internal temperature of 145°F (63°C). Remove the steak from the pan and let it rest for at least 3 minutes before serving.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it. Return the rested steak bites to the skillet and toss quickly to coat them in the garlic butter. Serve the steak bites immediately over the prepared parmesan mashed potatoes.
