Before you start

Before beginning, ensure all ingredients are measured and ready. Peel and quarter the potatoes uniformly to ensure they cook at the same rate.

Pat the steak cubes dry with paper towels; this is the most important step for achieving a perfect crust. Have your garlic minced and parsley chopped, as the final steps move quickly once the steak is in the skillet.

Ingredients at a glance (7)
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 4 tbsp unsalted butter
  • 1/2 cup grated parmesan cheese
  • 1 1/2 lbs sirloin steak, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 1 tbsp fresh parsley, chopped

Instructions

Mashed Potato Preparation

  1. Prepare the Mashed Potatoes
Place the peeled and quartered potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15 minutes. Drain the water, then add the butter and parmesan cheese. Mash until smooth and creamy. Keep warm while preparing the steak.
Look for Potatoes should be tender enough to pierce easily with a fork.
Tip Ensure the potatoes are well-drained so the mash stays thick and creamy.

The potatoes are fully cooked when they are tender throughout and yield easily to pressure. After mashing, the consistency should be smooth and creamy, with no lumps remaining.

The parmesan should be fully incorporated into the hot potatoes, creating a rich aroma and a slightly stretchy texture that serves as a perfect bed for the steak.

Steak Searing Process

  1. Sear the Steak Bites
Heat a heavy cast iron skillet over high heat. Pat the steak cubes dry and season with salt and pepper. Add to the hot skillet in a single layer. Sear until deeply browned on all sides, ensuring the internal temperature reaches 145°F (63°C). Remove the steak from the pan and let it rest for 5 minutes.
Look for The steak should have a dark, caramelized crust on all sides.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Do not overcrowd the skillet, as this will steam the meat instead of searing it.

The steak is ready when each cube is encased in a deep, dark brown crust. You should hear a consistent, loud sizzle when the meat hits the pan. If the meat begins to release too much liquid, remove it from the heat immediately, as this indicates the pan temperature has dropped and the meat is beginning to boil rather than sear.

Final Garlic Butter Finish

  1. Finish with Garlic Butter
In the same skillet, reduce heat to medium and melt the butter. Add the minced garlic and cook until fragrant, about 1 minute. Stir in the fresh parsley. Return the seared steak bites to the pan, tossing to coat thoroughly in the garlic butter sauce. Serve immediately over the prepared mashed potatoes.
Look for The sauce should be bubbling and fragrant with garlic.
Tip Watch the garlic closely to ensure it does not burn or turn bitter.

The garlic butter sauce is ready when the butter is fully melted, bubbling, and the garlic is soft but not browned. The aroma should be intensely fragrant. The steak bites should be coated evenly in the shimmering sauce, which will look glossy and rich. Ensure everything is served immediately while the butter sauce is hot and fluid.

Common mistakes

A common mistake is overcrowding the skillet, which lowers the pan temperature and prevents the steak from searing properly. Another error is failing to dry the steak thoroughly; surface moisture creates steam, preventing the desired caramelized crust.

Finally, do not rush the resting period, as cutting into the steak too early will result in a loss of flavorful juices and a drier final texture.

How to tell it’s done

The steak is done when it is deeply browned on the outside and reaches an internal temperature of 145°F (63°C). Use an instant-read thermometer to check the center of the largest cubes.

Once the target temperature is reached, remove the meat from the heat immediately to prevent overcooking and allow it to rest for at least 5 minutes to redistribute the juices.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
