Tips for success
For the best crust on the steak, make sure the skillet is preheated over high heat for at least 2 minutes before adding the butter. The butter should sizzle immediately and foam slightly.
When searing, resist the urge to move the steak around—let it sit undisturbed to develop a deep brown crust. After flipping, the second side takes less time, so keep an eye on the temperature.
To keep the mashed potatoes extra creamy, pass them through a ricer or food mill while they are still hot. This removes any lumps and gives a silky texture. If you don’t have a ricer, a potato masher works fine, but be gentle.
For a richer flavor, you can substitute half of the heavy cream with sour cream or cream cheese, but the video shows a simple version with just butter and cream.
Variations
- Herb-Infused Butter: Instead of store-bought garlic-herb butter, make your own by mixing 3 tablespoons softened butter with 1 teaspoon minced fresh rosemary, 1 teaspoon thyme, and a pinch of red pepper flakes. This adds a fragrant, earthy note.
- Blue Cheese Crumbles: For a tangy twist, crumble 1/4 cup blue cheese over the steak bites just before serving. The sharpness cuts through the richness of the butter and potatoes, adding a new layer of flavor.
- Balsamic Glaze: Drizzle a teaspoon of balsamic glaze over the finished dish for a sweet-and-sour contrast. The glaze’s acidity balances the savory butter and beef, creating a more complex taste.
- Mushroom Medley: Sauté 8 oz sliced cremini mushrooms in the same skillet after removing the steak, then spoon them over the top. The mushrooms absorb the beef and garlic flavors, adding an earthy depth.
Storage and make-ahead
- Fridge
- Leftovers can be refrigerated in an airtight container for up to 3 days. Reheat gently, adding a splash of cream or water to the potatoes.
- Freezer
- Freeze the cooked steak and mashed potatoes separately in freezer-safe containers for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat the steak in a hot skillet for 2-3 minutes per side, or in the microwave in 30-second intervals.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The steak may lose some of its crust, but it will still be flavorful. Reheat gently in a skillet over medium heat or in the microwave, adding a splash of cream or water to the potatoes to restore their creaminess. Let leftovers cool for no more than 2 hours before refrigerating.
The mashed potatoes can be made a day ahead and kept in the refrigerator. Reheat them slowly on the stovetop with a little extra cream or butter to loosen them.
The steak is best cooked fresh, but you can cut and season the cubes up to a day in advance, storing them in the refrigerator. The garlic-herb butter can also be prepared ahead and kept chilled, then sliced and placed over the hot steak.
Serving ideas
Serve the steak bites and mashed potatoes immediately after assembling, while the butter is still melting and the steak is warm. Spoon the potatoes into a shallow bowl, create a slight well in the center, and pile the steak on top.
The melting butter will pool in the well, creating a sauce that soaks into the potatoes. A sprinkle of fresh parsley adds color, though the video does not show it.
This dish is substantial enough to be a complete meal on its own. For a more elaborate presentation, you could add a side of steamed green beans or a simple salad, but the video focuses solely on the steak and potatoes. The contrast of textures—crispy-edged steak, silky potatoes, and glossy butter—makes every bite satisfying. Serve with a glass of red wine or a cold beer.

Garlic Butter Steak Bites over Creamy Mashed Potatoes

Ingredients
- 1 1/2 lb sirloin steak, cut into 1-inch cubes
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 3 tbsp garlic-herb butter (store-bought or homemade)
- 2 lb Yukon Gold potatoes, peeled and quartered
- 1/2 cup heavy cream
- 4 tbsp unsalted butter
- 1/2 tsp kosher salt
Instructions
- Pat the sirloin cubes dry with paper towels. Season with salt and pepper. Heat a cast-iron skillet over high heat until smoking. Add the butter, then arrange the steak bites in a single layer. Sear without moving for 2-3 minutes until a deep brown crust forms. Flip and sear another 2 minutes for medium-rare. Add the minced garlic and toss for 1 minute until fragrant. Remove the steak from the skillet and let rest.
- Place the potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook until fork-tender, about 15 minutes. Drain well. Return the potatoes to the pot over low heat for 1 minute to dry. Add the butter and mash until smooth. Warm the heavy cream and gradually stir it in. Season with salt to taste.
- Spoon the mashed potatoes into a shallow bowl. Pile the rested steak bites on top. Dollop the garlic-herb butter over the hot steak so it melts and cascades down. Serve immediately.
