Before you start

Before you begin, ensure you have all your ingredients measured and prepped. Thaw the shrimp completely if using frozen, and pat them dry with a paper towel to help the butter sauce adhere.

Slice the smoked sausage into uniform rounds to ensure even cooking, and cut the corn on the cob into small, manageable pieces.

Prepare your four sheets of foil by laying them out on your work surface so they are ready for assembly, and preheat your oven to 400°F (200°C) to ensure it reaches the correct temperature before you bake.

Ingredients at a glance (6)
  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced into rounds
  • 2 ears corn on the cob, cut into rounds
  • 1 pint cherry tomatoes
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced

Instructions

Packet Assembly

  1. Prepare the foil packets
Preheat your oven to 400°F (200°C). Cut four large sheets of heavy-duty aluminum foil. Divide the shrimp, sliced smoked sausage, corn rounds, and cherry tomatoes evenly among the four sheets, placing the ingredients in the center of each piece of foil.
Look for The ingredients should be piled in the center of the foil sheets with enough room on the sides to fold up the edges securely.
Tip Using heavy-duty foil prevents tearing, which keeps all the juices inside the packet while cooking.

The ingredients should be neatly arranged in the center of the foil sheets. Check that the sausage slices are uniform in thickness and the corn is cut into manageable rounds to ensure consistent cooking. Everything should be ready for the addition of the garlic butter sauce.

Seasoning and Sealing

  1. Season and seal
In a small bowl, whisk together the melted butter and minced garlic. Drizzle this mixture evenly over the ingredients in each foil packet. Fold the sides of the foil up and over the ingredients to create a sealed packet, ensuring the edges are tightly crimped to trap the steam and juices.
Look for Ensure the edges are folded tightly so that the steam cannot escape during the baking process.
Tip Place the packets on a baking sheet to catch any potential leaks and make transferring them to the oven much easier.

The butter and garlic should be whisked into a smooth, emulsified mixture. As you seal the packets, ensure the edges are crimped securely to create an airtight seal. This is the most critical step for trapping the steam and the delicious garlic butter flavors inside.

Baking and Serving

  1. Bake and serve
Place the baking sheet in the preheated oven and bake for 15 to 20 minutes. The shrimp must reach an internal temperature of 145°F (63°C) and the sausage must reach an internal temperature of 160°F (71°C). Carefully open the packets, letting the steam escape, and serve hot.
Look for The shrimp should be pink, opaque, and firm to the touch, and the tomatoes should be slightly blistered and soft.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Let the packets rest for 5 minutes before opening to allow the garlic butter sauce to thicken slightly and flavor the vegetables.

The packets should look puffed up from the steam when they come out of the oven. The shrimp must be fully opaque and cooked to 145°F (63°C) and the sausage to 160°F (71°C). The aroma of roasted garlic and sausage should be prominent as you carefully unfold the foil to serve the meal.

Common mistakes

A common mistake is overcrowding the foil packets, which can prevent the ingredients from cooking evenly. Be sure to distribute the shrimp, sausage, and vegetables in a single, relatively flat layer rather than a deep pile.

Another error is failing to seal the edges tightly; if steam escapes, the food will not cook as quickly and the sauce will not concentrate properly. Finally, avoid overcooking the shrimp, as they can become rubbery if left in the oven for too long. Stick to the suggested time and check for the internal temperature.

How to tell it’s done

The shrimp are done when they are opaque, firm, and have reached an internal temperature of 145°F (63°C). The sausage must reach an internal temperature of 160°F (71°C). Because they cook in a sealed environment, they will be very tender and juicy.

The cherry tomatoes should be soft and beginning to burst, releasing their juices into the garlic butter. Always check the thickest part of the meat with a food thermometer to ensure they are safely cooked, and let the packets rest for a few minutes before serving to avoid steam burns.

  • Shellfish: 145°F (63°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
