Before you start

Before you start, measure out all your ingredients. Cut the butter into medallions and slice the bell peppers into strips. Drain the bamboo shoots.

If your chicken thighs are large, trim any excess fat and pat them dry. Have your slow cooker ready and plugged in. This recipe comes together in minutes, but having everything prepped makes it even easier.

Ingredients at a glance (6)
  • 2 lb boneless skinless chicken thighs
  • 3 tbsp Thai red curry paste
  • 1 cup sliced bamboo shoots, drained
  • 2 red bell peppers, sliced into strips
  • 1 cup plain Greek yogurt
  • 4 tbsp garlic herb butter, cut into medallions

Instructions

Layer and Go

  1. Layer the Chicken and Aromatics
Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Spoon the Thai red curry paste over the chicken and spread it evenly. Scatter the sliced bamboo shoots and red bell pepper strips over the top.
Look for The chicken should be mostly covered with the paste and vegetables.
Tip No need to stir — the slow cooker will blend the flavors as it cooks.
  2. Add the Yogurt and Garlic Herb Butter
Dollop the Greek yogurt over the chicken and vegetables. Place the medallions of garlic herb butter on top, distributing them evenly across the surface.
Look for The yogurt and butter should be visible in dollops and pats.
Tip Using full-fat yogurt prevents curdling and gives a silkier sauce.

At the end of this phase, the slow cooker insert holds a colorful jumble: raw chicken thighs, red curry paste smeared over them, pale bamboo shoots, and bright red pepper strips.

Dollops of white yogurt and golden butter medallions sit on top. The aroma is already promising — garlicky, spicy, and fresh. Everything is ready to cook.

Slow Simmer

  1. Slow Cook Until Tender
Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is cooked through and tender. The sauce will be bubbling gently around the edges.
Look for The chicken should be fork-tender and the sauce slightly thickened.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking to keep the heat steady.
  2. Check the Chicken Temperature
Use an instant-read thermometer to check that the thickest part of a chicken thigh registers at least 165°F (74°C). The chicken should be opaque throughout and easily pull apart with a fork.
Look for The thermometer should read 165°F (74°C) or higher.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chicken isn't done, continue cooking for another 30 minutes and check again.

After a few hours, the slow cooker emits a rich, spicy aroma. The sauce is bubbling gently, the chicken has turned opaque and is beginning to shred, and the peppers have softened. The yogurt and butter have melted into a creamy, golden sauce. The kitchen smells like a Thai restaurant — warm, savory, and inviting.

Serve and Savor

  1. Stir Gently and Rest
Turn off the slow cooker. Gently stir the curry to combine the sauce, being careful not to shred the chicken. Let the curry rest uncovered for 5 minutes so the sauce settles and thickens slightly.
Look for The sauce should be creamy and aromatic, with visible red curry oil.
Tip Letting it rest helps the flavors meld and makes serving easier.
  2. Serve Over Rice or with Naan
Spoon the curry over steamed basmati rice or serve with warm garlic naan. Ladle extra sauce over each portion.
Look for The chicken should be glistening with sauce and the peppers tender.
Tip Garnish with fresh cilantro or lime wedges if desired (not shown).

The final curry is a beautiful brick-red, with tender chicken pieces and soft peppers suspended in a glossy sauce. The bamboo shoots retain a slight crunch. When spooned over rice, the sauce coats each grain. The garlic herb butter adds a fragrant finish. It looks and smells so good that it's hard to wait to dig in.

Common mistakes

One common mistake is lifting the lid to check on the curry — this lets out heat and extends cooking time. Another is using low-fat yogurt, which can curdle and separate. Stick with full-fat.

Also, don't skip the bamboo shoots; they add authenticity and texture. Finally, don't overcrowd the slow cooker — the chicken should be in a single layer so it cooks evenly.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. It should be fork-tender and easily pull apart. The sauce should be bubbling gently and slightly thickened.

If you prefer a thicker sauce, you can remove the chicken and simmer the sauce on the stovetop for a few minutes, or stir in a cornstarch slurry. The curry is best served hot, straight from the slow cooker.

  • Poultry: 165°F (74°C) in the thickest part
