Before you start

Before you begin, ensure your chicken breasts are patted dry with paper towels to ensure a good sear. Have all your ingredients measured and ready, as the searing process happens quickly. If your chicken breasts are very large, consider cutting them into uniform sizes.

Ensure your workspace is clean, and keep the raw chicken in the refrigerator until you are ready to stuff it. Have your skillet preheated over medium-high heat so it is ready to go as soon as the chicken is prepared.

Ingredients at a glance (6)
  • 4 large chicken breasts
  • 8 oz sliced mushrooms
  • 3 tbsp butter
  • 3 cloves minced garlic
  • 1 cup shredded mozzarella cheese
  • 1 tbsp fresh thyme

Instructions

Preparing the mushroom filling

  1. Sauté the filling
In a hot skillet, melt the butter over medium-high heat. Add the sliced mushrooms and minced garlic. Sauté until the mushrooms are golden brown and the garlic is fragrant. Remove from heat and set aside to cool slightly.
Look for Mushrooms should be soft and golden brown.
Tip Do not crowd the pan so the mushrooms sear instead of steaming.

The mushrooms should be reduced in volume, deeply golden brown, and have no visible liquid remaining in the pan. The garlic should be fragrant but not browned or burnt, as this can add a bitter flavor to the filling.

Stuffing the chicken breasts

  1. Stuff the chicken
Use a sharp knife to cut a pocket into the side of each chicken breast. Carefully stuff the pocket with the sautéed mushroom mixture and shredded mozzarella cheese. Sprinkle the outside with fresh thyme.
Look for Ensure the pockets are deep enough for the filling.
Tip Use a toothpick to secure the opening if necessary.

The pockets should be securely filled, and the chicken should maintain its shape. If the filling is too loose, use a toothpick to close the opening. The chicken should be seasoned on the outside for maximum flavor.

Searing the chicken

  1. Sear and finish
Place the stuffed chicken breasts into a hot skillet. Sear on both sides until the exterior is golden brown and the chicken reaches an internal temperature of 165°F (74°C). Let the chicken rest for 5 minutes before serving.
Look for The chicken should be firm and the juices should run clear.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer to ensure accuracy.

The chicken should have a dark, crispy, golden-brown exterior. When pressed, the meat should feel firm, and the internal temperature must reach 165°F (74°C). The cheese should be soft and flowing when the meat is finally sliced.

Common mistakes

A common mistake is overstuffing the chicken, which can cause the cheese to leak out prematurely. Only fill the pocket about three-quarters full.

Another error is not drying the chicken properly before searing; moisture on the surface prevents the crust from forming and can lead to steaming instead of searing.

Finally, do not skip the resting period, as cutting into the chicken immediately causes the juices to run out, leading to dry and less flavorful meat.

How to tell it’s done

The chicken is perfectly cooked when it reaches an internal temperature of 165°F (74°C). Use a meat thermometer inserted into the thickest part of the breast, avoiding the filling, to confirm the temperature.

The exterior should be deeply golden and crisp, and the cheese should be visibly bubbling and melted. Always allow the chicken to rest for at least 5 minutes before slicing to allow the juices to redistribute, ensuring the meat remains tender and succulent.
