Tips for success
To achieve the ultimate golden crust on your stuffed chicken, make sure your skillet is properly preheated before adding the meat. Melt the butter in the pan, waiting until it stops foaming and begins to shimmer.
This high heat instantly sears the chicken surface, locking in juices and creating a beautiful caramelized exterior. Resist the temptation to move the chicken around once it hits the pan; let it sear undisturbed for several minutes until it naturally releases from the surface.
Allowing the sautéed mushroom filling to cool slightly before stuffing it into the chicken is another crucial tip. If hot mushrooms are placed directly onto the cold, raw chicken, they will begin to cook the interior meat unevenly and melt the cheese prematurely.
Letting the filling cool to room temperature ensures the cheese remains intact until the chicken is seared, resulting in a much cleaner stuffing process and a more even melt during the final cooking stage.
Variations
- Spinach and Feta stuffed chicken: Substitute the mushrooms with sautéed baby spinach and crumbled feta cheese for a bright, Mediterranean-inspired filling option.
- Bacon and Cheddar stuffed chicken: Swap the mozzarella for sharp cheddar cheese and add crispy crumbled bacon to the mushroom mixture for a smoky flavor.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days, cooling for no more than 2 hours beforehand.
- Freezer
- Freezing is not recommended, as the cheese and mushrooms will release excess moisture upon thawing, making the chicken soggy.
- Reheat
- Reheat in a covered skillet over medium-low heat with a splash of water or broth for 10 minutes until the chicken reaches 165°F (74°C).
Allow any leftover stuffed chicken to cool completely at room temperature for no more than two hours before storing. Place the cooled chicken breasts in an airtight container, pouring any remaining pan juices over them to keep them moist.
Store the container in the refrigerator for up to three days. Note that the cheese will solidify upon cooling, but it will melt beautifully again once properly reheated.
You can prepare the mushroom filling up to a day in advance and store it in an airtight container in the refrigerator. You can also slice the pockets into the chicken breasts ahead of time. However, do not stuff the chicken with the cheese and mushrooms until you are ready to cook, as the raw chicken moisture can make the cheese soggy and degrade the texture of the filling over time.
Serving ideas
Serve this elegant stuffed chicken breast hot, directly from the skillet, while the cheese is still molten and gooey. Arrange the chicken on a warm serving platter and spoon the flavorful garlic butter pan drippings generously over the top. A final garnish of fresh thyme leaves adds a vibrant pop of color and a fresh, herbaceous aroma that cuts through the richness of the cheese and butter.
This dish pairs exceptionally well with a variety of simple side dishes that can absorb the delicious pan juices. Consider serving it alongside a bed of garlic mashed potatoes, roasted asparagus, or a crisp green salad tossed with a light vinaigrette.
For an elegant touch, a side of wild rice or buttered egg noodles makes an excellent accompaniment to complete this comforting, restaurant-quality meal.

Garlic Butter Mushroom Stuffed Chicken in One Pan

Ingredients
- 4 boneless, skinless chicken breasts
- 6 tbsp butter, divided
- 8 oz sliced mushrooms
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 2 tsp fresh thyme leaves
Instructions
- Melt two tablespoons of butter in a skillet over medium heat. Add the sliced mushrooms and sauté for five minutes until tender and browned. Stir in the minced garlic and cook for one additional minute until highly fragrant. Remove the mixture from the heat and transfer it to a bowl to cool slightly.
- Pat the chicken breasts dry with paper towels. Place them on a cutting board and use a sharp knife to cut a horizontal pocket into the thickest side of each breast, being careful not to slice all the way through.
- Stuff each chicken breast pocket with a generous spoonful of the sautéed garlic butter mushrooms and a portion of the shredded mozzarella cheese. Press the edges of the pocket together to seal the filling. If necessary, secure the openings with two or three wooden toothpicks inserted horizontally.
- Melt the remaining four tablespoons of butter in the skillet over medium-high heat. Add the stuffed chicken breasts and sear for six minutes per side until deeply golden. Lower the heat slightly and cook until the internal temperature reaches 165°F (74°C). Garnish with fresh thyme leaves before serving.
