Before you start

Before beginning, ensure all ingredients are measured and ready. Pat the chicken breasts dry with paper towels to ensure a better sear.

If the breasts are uneven in thickness, pound them lightly to a consistent thickness so they cook through evenly. Have your toothpicks ready if you find that the chicken needs extra help holding the stuffing inside during the searing process.

Ingredients at a glance (6)
  • 4 pieces chicken breast, boneless and skinless
  • 8 oz mushrooms, thinly sliced
  • 3 tbsp butter, for sautéing
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 tbsp fresh herbs, chopped

Instructions

Preparing the mushroom filling

  1. Prepare the mushroom filling
Melt the butter in a hot skillet over medium-high heat. Add the sliced mushrooms and minced garlic. Sauté the mixture until the mushrooms are golden brown and the moisture has evaporated, ensuring a concentrated flavor. Remove from heat and allow to cool slightly before mixing with the shredded cheese to prevent premature melting.
Look for Mushrooms should be deeply browned and fragrant.
Tip Ensure the mushrooms are very dry before adding to the pan for better searing.

The mushrooms should be reduced in volume, deeply golden brown, and smelling intensely of garlic and butter. Ensure there is no excess liquid left in the pan before removing them from the heat to mix with the cheese.

Stuffing and searing the chicken

  1. Stuff and sear the chicken
Cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through. Stuff each breast generously with the mushroom and cheese mixture. Secure the edges with toothpicks if necessary. Place the stuffed chicken in the preheated cast-iron skillet and sear until a golden-brown crust forms on both sides.
Look for Chicken should have a deep golden crust on the exterior.
Tip Use a heavy-bottomed skillet to ensure even heat distribution during the searing process.

The chicken should be securely stuffed, and the exterior should be developing a consistent, deep golden-brown color. Watch for the cheese beginning to soften slightly as the heat transfers from the skillet into the center of the breast.

Cooking and resting the chicken

  1. Cook through and serve
Continue cooking the chicken over medium-low heat until it is cooked through and the cheese is melted and bubbling inside. Use a meat thermometer to ensure the thickest part of the chicken reaches an internal temperature of 165°F (74°C). Remove from the heat and let the chicken rest for 5 minutes before serving to ensure the juices redistribute.
Look for Chicken reaches internal temperature and cheese is visibly melted.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Sprinkle with fresh herbs right before serving for a pop of color and freshness.

The chicken is fully cooked when it reaches 165°F (74°C) and the cheese is completely melted and bubbly. The chicken should feel firm to the touch, and the resting period is essential for ensuring the juices redistribute throughout the meat.

Common mistakes

A common mistake is overcrowding the skillet, which causes the chicken to steam instead of sear. Cook in batches if necessary to maintain the heat of the pan.

Another error is failing to let the mushrooms brown sufficiently; if they are not sautéed long enough, they will release excess water into the chicken, leading to a soggy filling.

Finally, avoid rushing the resting period, as this is crucial for moisture retention.

How to tell it’s done

The chicken is perfectly done when the exterior is golden-brown and crispy, and the internal temperature has reached 165°F (74°C). Use a digital meat thermometer inserted into the thickest part of the breast, away from the stuffing, to confirm.

The cheese should be soft and oozing slightly when the chicken is sliced, indicating that the heat has penetrated the filling effectively.

  • Poultry: 165°F (74°C) in the thickest part
