Tips for success

For the best cheese pull, use a high-quality cheese like kaşar or low-moisture mozzarella. Avoid aged cheeses that don't melt as smoothly. Shred the cheese yourself for the best texture.

Also, make sure the dough is well-kneaded so it can stretch without tearing. If the dough is too soft, refrigerate it for 15 minutes before shaping to make it easier to handle.

To get a glossy, golden crust, brush the rolls with an egg wash (1 egg beaten with 1 tbsp water) before baking. But this is optional. The garlic herb butter brushed after baking adds flavor and shine.

If you want extra garlic flavor, add a few minced garlic cloves to the butter and let it sit for 10 minutes before brushing. Use fresh herbs like parsley or thyme for a vibrant finish.

Variations

  • Spicy Pepperoni: Add 1/2 cup diced pepperoni to the cheese filling for a spicy, savory twist. Top with cherry tomatoes and a sprinkle of red pepper flakes before baking.
  • Herbed Ricotta: Mix 1 cup ricotta cheese with 2 tbsp chopped fresh basil and 1 clove minced garlic. Use this in place of half the kaşar cheese for a creamier filling.
  • Pesto Swirl: Spread 2 tbsp basil pesto on each flattened dough disc before adding the cheese. The pesto adds a bright, herby flavor that pairs well with the tomatoes.
  • Bacon Cheddar: Substitute the kaşar with sharp cheddar and add 1/2 cup cooked, crumbled bacon to the filling. Omit the cherry tomatoes or keep them for color.

Storage and make-ahead

Fridge
Store leftover bread in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) for 5-10 minutes to restore crispness.
Freezer
Freeze baked and cooled bread for up to 3 months. Thaw overnight in the fridge, then reheat in a 350°F (175°C) oven until warm.
Reheat
Reheat in a 350°F (175°C) oven for 5-10 minutes, or until warmed through and the cheese is melted again.

Store any leftover bread in an airtight container at room temperature for up to 2 days. The bread will lose its crispness but remain soft. To reheat, place in a 350°F (175°C) oven for 5–10 minutes, or until warmed through. Avoid microwaving, as it can make the bread tough and the cheese rubbery. The bread is best when fresh, but it can be revived with a quick toast.

The dough can be prepared up to the point of stuffing and then refrigerated overnight. Cover the pan tightly and let the dough rise slowly in the fridge. The next day, let it come to room temperature for 30 minutes before baking.

Alternatively, you can bake the bread fully, let it cool completely, and freeze it. Wrap tightly in plastic wrap and foil. To serve, thaw overnight in the fridge and reheat in the oven.

Serving ideas

Serve this pull-apart bread warm, as the cheese is most stretchy and the garlic butter is most aromatic. Place the pan in the center of the table and let everyone pull off their own roll.

It's perfect as an appetizer for a dinner party, a side for soups or salads, or a fun snack for game day. Pair it with a simple green salad or a bowl of marinara sauce for dipping.

The bread is satisfying on its own, but you can also serve it with extra garlic herb butter or a sprinkle of flaky sea salt. For a more substantial dish, serve alongside grilled meats or roasted vegetables. The rolls are best eaten within a few hours of baking, but they can be revived in the oven. If serving later, keep them covered to retain moisture.

Frequently asked questions

Can this bread be made without kaşar cheese?
Yes, kaşar cheese can be substituted with low-moisture mozzarella, provolone, or a mix of mozzarella and cheddar. The key is to use a cheese that melts well and becomes stretchy. Avoid aged cheeses that don't melt smoothly.
Why did the cheese leak out during baking?
Cheese leaks if the dough isn't sealed properly. Make sure to pinch the edges of the dough together firmly and roll the ball to smooth the seam. Also, avoid overfilling the rolls. Using a slightly thicker dough disc can help contain the filling.
Can the dough be prepared in advance?
Yes, the dough can be made and refrigerated overnight after the first rise. Punch down the dough, cover the bowl, and refrigerate. The next day, shape and stuff the rolls, let them rise at room temperature for about 30 minutes, then bake as directed.
What can be used instead of cherry tomatoes?
Grape tomatoes or small diced Roma tomatoes work well. You can also omit the tomatoes entirely for a plain cheese pull-apart bread. If using larger tomatoes, remove the seeds to avoid excess moisture.
How should leftovers be reheated?
Leftovers are best reheated in a 350°F (175°C) oven for 5-10 minutes. This helps restore the crisp crust and melts the cheese again. Avoid microwaving, as it can make the bread tough and the cheese rubbery.

Garlic Butter Cheese Pull-Apart Bread

Golden pull-apart bread rolls with melted cheese stretching between them.

Ingredients

  • 1 1/2 cups warm milk
  • 100 ml vegetable oil
  • 1 large egg
  • 2 tbsp granulated sugar
  • 1 packet active dry yeast
  • 1 tsp salt
  • 3 1/2 cups all-purpose flour
  • 2 cups kaşar cheese, shredded
  • 1 cup cherry tomatoes, sliced
  • garlic herb butter, melted, to taste

Instructions

  1. In a large bowl, combine the warm milk, vegetable oil, egg, sugar, yeast, and salt. Whisk until the yeast dissolves. Add the flour and stir with a wooden spoon until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 8–10 minutes, until smooth and elastic. Place in a greased bowl, cover with a towel, and let rise in a warm spot until doubled, about 1 hour.
  2. Punch down the risen dough. Divide into 8 equal pieces. Shape each piece into a smooth ball by pulling the edges toward the center and pinching to seal. Place the balls in a greased 9-inch round baking pan, leaving a little space between them. Cover loosely with the towel and let rest for 10 minutes.
  3. Take each dough ball and flatten it into a disc. Place a generous spoonful of shredded kaşar cheese in the center. Gather the edges over the filling and pinch to seal. Roll gently to smooth the ball. Return to the pan, seam side down. Repeat with the remaining dough and cheese. Cover and let rise for 20 minutes while the oven preheats.
  4. Gently press a few cherry tomato slices into the center of each dough ball, slightly flattening the top. The tomatoes should sit snugly in the dough. If any tomato juice pools, dab it lightly with a paper towel to avoid soggy spots.
  5. Preheat the oven to 350°F (175°C). Bake the bread for 35 minutes, until the rolls are puffed and golden brown and the cheese is bubbling. If the tops brown too quickly, tent loosely with foil.
  6. Remove the bread from the oven and immediately brush the hot rolls with the melted garlic herb butter, covering the tops and the sides where they meet the pan. The butter will soak into the crust and add flavor.
  7. Let the bread cool in the pan for 5 minutes. Then, using two forks or your hands, pull apart the rolls. Serve warm so the cheese stretches. The bread is best enjoyed immediately.
