Tips for success
To achieve the ultimate crispy-yet-tender texture, pay close attention to the thickness of your dough. When rolling out the refrigerated pizza dough, aim for an even thickness of about one-quarter inch.
If the dough is too thick, the inner layers may remain gummy and undercooked while the outside burns. If it is too thin, it may tear under the weight of the beef and cheese. Consistent thickness ensures that the entire rollup cooks at the same rate, resulting in a perfect bite every time.
For an extra layer of savory depth, consider browning the garlic slightly before mixing it into the melted butter. While raw minced garlic brushed onto hot rolls provides a sharp, punchy kick, gently sweating the garlic in warm butter for one minute beforehand mellows the flavor, sweetness, and bite.
This subtle adjustment makes the garlic butter glaze incredibly rich and well-rounded, perfectly complementing the ground beef and melted mozzarella cheese without overpowering the dish.
Variations
- Spicy Jalapeño Rollups: Add diced pickled jalapeños and a pinch of cayenne pepper to the ground beef mixture, and swap the mozzarella for pepper jack cheese to give these rollups a spicy kick.
- Bacon Cheeseburger Rollups: Fold crispy crumbled cooked bacon into the ground beef and cheese filling before rolling to recreate the classic, smoky flavors of a gourmet bacon cheeseburger.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze baked rollups in a single layer on a sheet, then transfer to a freezer-safe bag for up to 2 months.
- Reheat
- Reheat in a 350°F (175°C) oven for 10 to 12 minutes until warmed through and the cheese is melted.
Store any leftover garlic butter beef rollups in an airtight container in the refrigerator within two hours of cooking to ensure food safety. Keeping them in a sealed container prevents the dough from drying out and absorbing other refrigerator odors. They will keep well for up to three to four days. For the best quality, store the rollups with a spoonful of the leftover pan jus from the baking dish to keep them moist during reheating.
These rollups can be assembled up to 24 hours in advance. Roll and slice the dough, place the rollups in the greased baking dish, cover tightly with plastic wrap, and store in the refrigerator.
Do not add the beef broth until you are ready to bake, as the dough will absorb the liquid and become soggy. When ready to serve, pour the broth around the rolls and bake as directed, adding a few extra minutes to the baking time if cooking straight from the cold fridge.
Serving ideas
Serve these warm rollups straight from the baking dish to preserve the dramatic, ultra-stretchy cheese pull. Arrange the dish in the center of the table with a spoon so guests can scoop up the rich pan jus from the bottom of the pan to pour over their individual portions.
The combination of the crispy, garlic-buttered top crust and the broth-soaked bottom makes each rollup a complete, self-contained comfort food experience that needs very little accompaniment.
Pair these savory beef rollups with a crisp, refreshing side salad dressed in a light vinaigrette to cut through the richness of the beef, butter, and cheese. Classic burger accompaniments like sliced dill pickles, a side of warm marinara sauce, or a smoky barbecue sauce for dipping also make fantastic additions. For a casual gathering, serve them alongside roasted potato wedges or a simple vegetable platter to round out a satisfying, crowd-pleasing dinner.

Garlic Butter Beef Cheeseburger Rollups

Ingredients
- 1 lb ground beef
- 1 package (13.8 oz) refrigerated pizza dough
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup beef broth
- 4 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon. Cook for 6 to 8 minutes, stirring occasionally, until the beef is fully browned and no pink remains. Ensure the beef reaches a safe internal temperature of 160°F (71°C). Drain any excess grease from the skillet and set the beef aside to cool slightly.
- Roll out the refrigerated pizza dough on a lightly floured surface into a large rectangle. Evenly spread the cooled ground beef across the dough, leaving a half-inch border. Sprinkle the shredded mozzarella cheese generously over the beef. Starting from the long edge, roll the dough tightly into a log. Use a sharp knife to slice the log into six equal-sized rollups.
- Place the six rollups cut-side up in a single row inside the prepared ceramic baking dish. Carefully pour the beef broth into the bottom of the dish around the rollups, taking care not to pour it directly over the tops of the dough. Transfer the dish to the preheated oven and bake at 375°F (190°C) for 20 to 25 minutes.
- While the rollups bake, whisk together the melted unsalted butter, minced garlic, and finely chopped fresh parsley in a small bowl. Remove the baking dish from the oven once the rolls are golden brown. Immediately brush the warm garlic-parsley butter generously over the tops of the hot rollups. Serve warm while the cheese is beautifully melted and stretchy.
