Before you start

Before beginning, ensure all ingredients are ready and at room temperature if possible. Preheat the oven to 350°F (175°C) to ensure it reaches the correct temperature by the time the sliders are assembled.

Have your baking dish ready on a stable surface. Keep a clean spatula and a whisk nearby to manage the frying and the glaze application without delays during the assembly process.

Ingredients at a glance (6)
  • 1 package slider rolls, split
  • 12 slices bologna, pan-fried
  • 6 slices American cheese
  • 4 tbsp butter, melted
  • 2 tbsp yellow mustard
  • 1 tsp poppy seeds

Instructions

Frying the meat

  1. Prepare the bologna
Heat a skillet over medium heat. Fry the bologna slices until they are lightly browned on both sides. Remove from the pan and drain on paper towels to remove excess grease.
Look for The bologna should have a nice sear and be heated through.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Do not overcrowd the skillet to ensure even browning.

The bologna should have a golden-brown exterior and be hot throughout. Watch for the edges to slightly curl, which indicates the moisture has reduced sufficiently.

Ensure you drain the excess fat properly so the sliders do not become greasy.

Assembling the layers

  1. Assemble the sliders
Place the bottom half of the slider rolls into a large rectangular baking dish. Layer each roll with a slice of fried bologna and a portion of American cheese. Cover with the top half of the rolls.
Look for Ensure the cheese is distributed evenly across the rolls.
Tip Press down gently on the roll tops to ensure a compact fit.

The sliders should be packed tightly into the baking dish so they hold their shape. Ensure every roll has an even distribution of cheese and bologna. The bread should feel sturdy and ready for the glaze application.

Glazing and baking

  1. Glaze and bake
In a small pitcher, whisk together the melted butter and mustard. Pour the mixture evenly over the sliders. Sprinkle the poppy seeds over the top. Bake in a preheated oven at 350°F (175°C) until the rolls are golden brown and the cheese is melted.
Look for The tops should be golden brown and the cheese bubbly.
Tip Use a brush if needed to ensure the butter mixture covers all roll tops.

The sliders are ready when the tops are a deep, uniform golden brown. The cheese should be visible and melted between the layers. The entire dish should smell aromatic and slightly toasted, indicating the glaze has properly set.

Common mistakes

A common mistake is using cold bologna directly from the fridge, which can lead to uneven cooking and cold centers. Another error is over-pouring the butter glaze; apply it evenly to avoid soggy bottoms.

Ensure the oven is fully preheated, as a cold oven will cause the rolls to dry out before the cheese has a chance to melt properly. Finally, avoid using too much mustard, as it can overwhelm the delicate balance of the sliders.

How to tell it’s done

The sliders are done when the tops are golden brown and the cheese is completely melted and bubbling at the edges. Since the bologna is pre-cooked in the skillet, the oven time is primarily to toast the bread and melt the cheese.

The internal temperature of the bologna should reach 160°F (71°C) to ensure safety, although it will be well above this after the oven bake.

  • Ground meat: 160°F (71°C) in the thickest part
