Before you start

Before starting, make sure the watermelon and strawberries are chilled. Wash the lime and cucumber well. Set out a large glass pitcher, a box grater, a cutting board, and a chef's knife.

Measure the cold water and have the ice cubes ready. If you want extra-cold glasses, place them in the freezer for 15 minutes before serving. Gather all ingredients on the counter so assembly goes quickly.

Ingredients at a glance (8)
  • 6 cups seedless watermelon cubes
  • 2 cups fresh strawberries, hulled and halved
  • 2 tbsp fresh ginger, grated
  • 1/2 cup grated cucumber
  • 1 lime, grated zest and juice
  • 1/2 cup fresh mint leaves
  • 4 cups ice cubes
  • 2 cups cold water

Instructions

Prep the Fruit and Aromatics

  1. Prep the fruit and aromatics
Slice the seedless watermelon into cubes. Hull the strawberries and cut them in half. Using a box grater, grate the fresh ginger, cucumber, and the lime zest directly into a bowl. Squeeze the lime juice over the grated mixture.
Look for The grated mixture should be colorful and fragrant, with visible ginger and lime zest.
Tip Grate the ginger and cucumber over a bowl to catch all the juices.
  2. Fill the pitcher with fruit
Place the cubed watermelon and halved strawberries into a large glass pitcher, filling it up.
Look for The pitcher should be nearly full with fruit.
Tip Use a large pitcher to leave room for water and ice.

At the end of this phase, the watermelon and strawberries are cubed and halved, and the ginger, cucumber, and lime are grated into a colorful pulp.

The mixture smells fresh and zesty. The pitcher is empty and ready to be filled. Everything is prepped and within reach.

Build the Pitcher

  1. Add the grated aromatics
Add the grated ginger, cucumber, and lime mixture to the pitcher with the fruit.
Look for The aromatics should be evenly distributed over the fruit.
Tip Scrape every bit of the grated mixture into the pitcher for maximum flavor.
  2. Add mint and ice
Add the fresh mint leaves and plenty of ice cubes to the pitcher.
Look for The pitcher should be full of ice and mint.
Tip Use a lot of ice to keep the drink frosty.

The pitcher is now filled with watermelon cubes, strawberry halves, the grated aromatics, mint leaves, and ice. It looks vibrant and abundant, with green mint and red fruit contrasting against the ice. The pitcher is nearly full, leaving only a little room for water.

Finish and Serve

  1. Pour in water and stir
Pour the cold water over the fruit and ice. Stir gently with a long spoon to combine the flavors without bruising the mint.
Look for The liquid should turn a light crimson color.
Tip Stir slowly to keep the mint leaves intact.
  2. Serve immediately
Pour the agua fresca from the pitcher into ice-filled glasses to the brim. Garnish each glass with a sprig of fresh mint and serve immediately.
Look for The drink should be frosty and crimson with mint garnish.
Tip Serve right away for the best flavor and chill.

After adding water and stirring, the liquid has turned a light crimson color and the mint leaves are floating on top. The drink is frosty and aromatic. When poured into glasses, it fills to the brim with ice and fruit. A mint sprig garnish completes the presentation.

Common mistakes

Avoid over-stirring or muddling the mint, as it can turn bitter and make the drink cloudy. Do not let the agua fresca sit for too long before serving, as the fruit will soften and the ice will melt, diluting the flavor.

If you add too much ginger, the drink can become spicy; start with less and add more to taste. Also, be sure to use cold water and plenty of ice to keep the drink frosty.

How to tell it’s done

The agua fresca is ready when the water has turned a light pink-crimson color and the flavors have melded slightly, about 5 minutes after stirring. The fruit should still be crisp and colorful, and the mint should be bright green.

Taste a spoonful: it should be refreshingly cool with a balanced sweetness from the fruit, a zesty kick from the ginger and lime, and a subtle cucumber freshness. Adjust with more lime or mint if desired.
