Tips for success

For the best flavor, use a good-quality beef consommé and a rich brown gravy. If you have time, make your own gravy from pan drippings or a roux, but a good canned version works perfectly.

The Vidalia onions are key—they are sweeter and milder than regular onions, which balances the savory gravy.

This recipe is incredibly versatile. Serve the shredded pork over egg noodles, mashed potatoes, or polenta. It also makes fantastic sliders on toasted brioche buns.

For a low-carb option, spoon it over cauliflower rice or roasted vegetables. The leftovers are just as delicious the next day, if they last that long.

Variations

  • Cheesy French Onion: After shredding the pork, spoon it into a baking dish, top with shredded Gruyère or Swiss cheese, and broil until bubbly and golden. Serve over toasted baguette slices for a French onion soup-inspired meal.
  • Spicy Kick: Add 1-2 teaspoons of hot sauce or a pinch of red pepper flakes along with the consommé for a subtle heat. For more spice, stir in a diced jalapeño with the onions.
  • Herb-Infused: Add a few sprigs of fresh thyme or rosemary to the slow cooker with the onions. Remove the herb stems before shredding. This adds an earthy, aromatic note to the gravy.
  • Mushroom Lover's: Add 8 oz of sliced cremini mushrooms along with the onions. The mushrooms will absorb the savory flavors and add an extra layer of umami to the dish.

Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much.

This recipe is ideal for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. You can also shred the cooked pork and freeze it with the gravy for up to 3 months.

Serving ideas

Serve the pork sirloin roast hot, with generous spoonfuls of the onion gravy. It pairs beautifully with mashed potatoes, rice, or crusty bread to soak up every drop.

For a complete meal, add a simple green salad or steamed vegetables on the side. The dish is hearty enough to be the star of a weeknight dinner.

For a fun twist, pile the shredded pork onto toasted brioche slider buns and top with a slice of provolone or Swiss cheese.

Broil for a minute until the cheese melts, then serve with a side of au jus for dipping. This makes a crowd-pleasing appetizer or a casual dinner that everyone will love.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes, this can be adapted for a pressure cooker. Sear the roast on the sauté function, then add the onions, consommé, gravy, and butter. Pressure cook on high for 60-70 minutes, then allow a natural release for 15 minutes before shredding.
Why is the pork sirloin roast sometimes dry?
Pork sirloin is naturally lean, so it can dry out if overcooked. The key is to cook it low and slow, and to ensure there is enough liquid in the slow cooker. Also, resting the roast in the gravy after cooking helps keep it moist.
Can you use a different cut of pork?
Yes, pork shoulder or pork butt are excellent substitutes. They have more fat, which makes them even more forgiving and tender. Adjust the cooking time as needed—shoulder may take slightly longer.
How can you thicken the gravy?
If the gravy is too thin after cooking, transfer it to a saucepan and simmer over medium heat until reduced. Alternatively, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the hot gravy until thickened.
Can this be cooked on high instead of low?
Yes, you can cook on high for 4-5 hours instead of low for 8-10. However, low and slow yields the most tender results. If using high, check for doneness earlier to avoid drying out the pork.

French Onion Pork Sirloin Roast (Slow Cooker)

Slow cooker pork sirloin roast with caramelized onions and rich gravy

Ingredients

  • 3 1/2 lb boneless pork sirloin roast
  • 2 large Vidalia onions, thinly sliced
  • 1 cup beef consommé
  • 1 cup brown gravy (canned or homemade)
  • 4 tbsp unsalted butter, cut into pats

Instructions

  1. Place the pork sirloin roast in the center of the slow cooker insert. Scatter the sliced Vidalia onions over and around the roast. Pour the beef consommé around the base of the roast, being careful not to rinse the onions off the top.
  2. Pour the brown gravy over the roast and onions. Dot the top of the roast with the butter pats. Do not stir—the layers will meld during cooking.
  3. Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C), but for shredding, it will be higher. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker and let the roast rest in the cooking liquid for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
  5. Transfer the roast to a cutting board and shred with two forks, discarding any large fat pieces. Return the shredded pork to the slow cooker and toss with the gravy and caramelized onions.
  6. Spoon the shredded pork and gravy onto plates or into brioche slider buns. Serve hot, with extra gravy spooned over the top.
