Tips for success
For the most flavorful gravy, use a good-quality beef consommé or broth. Low-sodium versions are fine, but you may need to season with salt at the end.
If you prefer a thicker gravy, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into the cooking liquid during the last 30 minutes, then let it bubble until thickened.
The cowboy garlic butter can be made in advance and frozen in a log, then sliced as needed.
This recipe is also forgiving—you can add a splash of red wine or a tablespoon of balsamic vinegar for extra depth, but the video version keeps it simple. Serve the roast with crusty bread to mop up every bit of the delicious sauce.
Variations
- Mushroom and Thyme: Add 8 ounces sliced cremini mushrooms along with the onions, and use fresh thyme sprigs in place of the herbs in the compound butter. The mushrooms add an earthy depth that pairs beautifully with the beef.
- Spicy Chipotle: Mix 1 tablespoon chopped chipotle peppers in adobo sauce into the consommé before pouring over the roast. The smoky heat cuts through the richness and adds a subtle kick.
- Red Wine Reduction: Replace half of the consommé with a dry red wine like Cabernet Sauvignon. The wine adds complexity and a deep color to the gravy. Let the alcohol cook off during the slow cooking process.
- Herb and Mustard Crust: Rub the roast with 2 tablespoons Dijon mustard and a mix of chopped fresh rosemary, thyme, and garlic before placing it in the slow cooker. The mustard adds a tangy note that balances the sweet onions.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed to restore the gravy's consistency.
- Freezer
- Freeze the shredded beef and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a little beef broth or water if the mixture seems dry.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The shredded beef keeps well and actually becomes more flavorful as it sits. Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed to loosen the gravy.
This dish is ideal for meal prep. Cook the roast as directed, then shred and store it in the refrigerator. It can be made up to 2 days ahead and reheated when ready to serve. The flavors meld and deepen overnight, making it even more delicious the next day.
Serving ideas
Serve the French onion garlic butter chuck roast over a bed of warm buttered egg noodles, which soak up the rich gravy beautifully.
Alternatively, spoon it over creamy mashed potatoes or soft polenta for a comforting meal. A side of steamed green beans or a crisp salad balances the richness.
For a truly indulgent experience, pile the beef onto toasted baguette slices and top with melted provolone or Swiss cheese, then broil until bubbly for an open-faced French onion sandwich.
The leftovers are versatile enough to be used in tacos, stuffed into baked potatoes, or folded into a hearty hash.

French Onion Garlic Butter Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 2 medium Vidalia onions, thinly sliced
- 1 cup beef consommé
- 4 tbsp cowboy garlic butter, sliced into medallions
- Buttered egg noodles, for serving
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the sliced Vidalia onions over the top of the roast, covering it evenly. Pour the beef consommé around the base of the roast, being careful not to rinse the onions off the meat.
- Place the cowboy garlic butter medallions evenly across the top of the roast. They will melt and baste the meat as it cooks, infusing the gravy with garlic and herbs.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and shreds easily. The onions will caramelize and the butter will blend into a rich gravy. Let it rest for 3 minutes before slicing.
- Once the beef is tender, transfer it to a cutting board and let it rest for at least 3 minutes. Then use two forks to shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the gravy.
- Spoon the shredded beef and onion gravy over warm buttered egg noodles. Serve immediately, with extra gravy spooned over the top.
