Tips for success
For the deepest flavor, sear the roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a caramelized crust that enriches the gravy.
However, it's not necessary—the slow cooker will still produce a delicious, tender roast. If you do sear, do it in a well-ventilated kitchen and let the roast cool slightly before placing it in the slow cooker.
To make the gravy even richer, stir in a tablespoon of butter or a splash of cream just before serving.
If you prefer a thicker gravy, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the hot liquid, then simmer for a few minutes. For a brighter flavor, add a teaspoon of fresh thyme or a splash of sherry vinegar at the end.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the onions. They will release moisture and add an earthy depth to the gravy. Sauté them first for extra browning, or simply toss them in raw.
- Use Chuck Roast: Substitute the bottom round with a 3.5-lb chuck roast for even more marbling and tenderness. Chuck roast is richer and may require slightly less cooking time. Adjust the cooking time to 7-9 hours on low.
- Make It Spicy: Add 1 teaspoon of red pepper flakes or a chopped jalapeño with the onions for a gentle heat. The spice will infuse the gravy without overpowering the French onion flavor. Serve with pickled jalapeños on top.
- Cheesy Topping: After shredding the beef, sprinkle 1 cup of shredded Gruyère or Swiss cheese over the hot meat and let it melt. This adds a rich, nutty flavor that complements the onions and gravy. Serve open-faced on toasted bread.

Store leftover roast and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much. The meat will remain tender and juicy.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed. You can also cook the roast a day ahead, shred it, and store it in the gravy in the refrigerator, then reheat gently before serving.
Serving ideas
Serve the shredded beef piled high on toasted brioche slider buns, with extra gravy spooned over the top.
The buns soak up the savory sauce, making each bite a perfect combination of tender meat, sweet onions, and rich gravy. For a low-carb option, serve over mashed cauliflower or roasted vegetables instead of buns.
This dish also works beautifully over egg noodles, mashed potatoes, or polenta. The gravy acts as a sauce for the starch, and the beef is hearty enough to stand alone. Add a crisp green salad or steamed green beans on the side to balance the richness. Leftovers are even better the next day, so make extra.

French Onion Brown Gravy Bottom Round Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 2 large Vidalia onions, thinly sliced
- 1 cup beef consommé
- 2 cups brown gravy
- 4 tbsp unsalted butter, cut into pats
- 6 brioche slider buns, toasted
Instructions
- Place the beef bottom round roast in the center of a 6-quart slow cooker. Scatter the sliced Vidalia onions over and around the roast, tucking some underneath for even flavor. Pour the beef consommé around the base of the roast, being careful not to rinse the onions off the top.
- Pour the brown gravy evenly over the roast and onions. Dot the top of the roast with the butter pats, distributing them evenly. Do not stir; the layers will meld during cooking.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the roast is fork-tender and easily shreds. The onions will caramelize into silky ribbons and the gravy will deepen into a glossy mahogany sauce. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the liquid for at least 10 minutes before shredding. This allows the juices to redistribute and the meat to become even more tender.
- Using two forks, shred the roast directly in the slow cooker, mixing it with the onions and gravy. Pile the shredded beef onto toasted brioche slider buns and spoon extra gravy over the top. Serve hot.
